Caché, the casual restaurant showcasing a market-based menu by award-winning local chef Josiah Citrin and his Chef de Cuisine, Nyesha Arrington, presents their New Year’s Eve Dinner on Thursday, December 31, 2009. Two seatings will be available on New Year’s Eve in Caché outdoor or indoor dining room. The early seating, from 5:30 – 6:30 p.m. offers a four course menu priced at $75 per guests; the late seating into 2010 includes a six course menu and flute of champagne for $150, and can be booked between 8:30 p.m. until 9:30 p.m. Both dinners exclude beverages, gratuities and taxes.

Both menus are a collaboration of Citrin and Arrington’s vision, expressing both the quality of California ingredients and the elegance of an evening spent in a stylish beach-side setting. The late seating six course dinner begins with a tasting of Truffle Egg, Chives, and Asparagus Froth followed by an appetizer of Maine Lobster, with Glazed Endive, Citrus Segments, and Vanilla. Guests may select either Smoked Salmon with Potato Blini, Crème Fraîche, Watercress-Cauliflower Puree or Caché s signature Mushroom Flatbread, which can be optioned to be served with Italian white truffles as a $35 supplement. Served as a mid-course, Caché next presents a choice of Seared Foie Gras with Cranberry Compote, Brioche, Sorrel or Butternut Squash Ravioli with Brown Butter, Sage. Entrées reveal the European influences and training of both Citrin and Arrington which are presented elegantly and interpreted by an authentic California sensibility. There is a Duo of Beef Fillet with Braised Short Rib, Twice Baked Potato, Dijon Mousseline, Perigord Sauce; a John Dory with Black Trumpet Mushroom, Stuffed Cabbage, Sauce Vin Rouge; or a Mushroom Stuffed Cabbage with Black Trumpet Mushroom, Potato Mousseline, Sauce Vin Rouge to select from. For dessert, each guest receives a Caché Dessert Trio of Lemon Tartlet, Chocolate Crunch and “Twinkie.

Caché has arranged live music by the talented singer/songwriter David Boyles, who performs two sets, beginning at 8:30 p.m. At 11:00 p.m., DJ Metrix takes over for the late night entertainment into the New Year, spinning his eclectic mixes until 2:00 a.m. Caché is also making the lounge and bar available for non-dining revelers with no cover or minimum required; advance lounge table reservations are recommended.

Both Citrin and Arrington frequent the weekly Farmers’ Market in Santa Monica, where they select the restaurant’s produce and establishing relationships with farmers from the outlying regions of Los Angeles. This affinity for fresh seasonal products is clearly reflected in the market-based menus of the restaurant’s bar lounge and restaurant dining room.

Opened in July 2009, Caché creates a relaxed, indoor-outdoor ambience. The clean and modern design highlights natural materials, using white walls, dark mahogany and teak flooring, combining them with concrete, stainless steel and fieldstone surfaces. Caché’s spectacular garden surroundings are integrated with the streamlined dining room, utilizing an airy, open floor plan. The outdoor bar and lounge, with its retractable awnings and fire-pit, can accommodate all-weather dining and three cabanas encased in fieldstone sit adjacent to the garden lounge for intimate and private dining. Caché is collaborating with Aldis Browne Fine Arts of Santa Monica to organize regularly changing exhibits by prominent and emerging local artists displayed in the dining room.
