It’s past New Years and I’m still thinking of Champagne Cocktails.

Starting from Facebook I asked:

I know how to make some Champagne Cocktails, but don’t recall all the names.

Kir Royale has the Chambord, Mimosa is obvious, but the ones with St Germain Elderflower and Domaine de Canton Ginger…I don’t know if they have actual names. You have any others?

Laura: The Domaine de Canton is great – 3 parts Champagne, one part Domaine de Canton and a splash of lime! And the Pom Pom is also fun – a shot of pomegranate liqueur, one shot of pomegranate juice and Champagne. You should test them this week – I love a good Rose Champagne – here are the top 50 Champagne Cocktails!

JD: St. Germain cocktail, from Elder flowers ought to be good for healing! And try this site for a long list of champagne creations: Bellini, Blue Velvet, and on and on.http://www.wineintro.com/champagne/cocktails/

Denise: I could go for a Bellini right now!

Here’s the Bellini recipe from wineintro.com:

Champagne Bellinis are peachy ways to enjoy leftover Champagne, or to share a romantic toast! This is one of my favorite types of Champagne cocktail. Very, very yummy. First, the traditional recipe.

6oz Champagne

1 peach, pureed

Puree one fresh peach, and put into a tall flute glass. Note that you can use 3 shots of peach nectar instead, if you don’t have a real peach. Add in Champagne. Do not stir, this would destroy all of the bubbles.

Enjoy!

For a simpler Bellini, just use:

6oz Champagne

1oz peach schnapps

Blend together, and enjoy the peachy aroma. Enjoy!

If you’re looking for a more complex recipe, give this one a try –

3oz pureed peaches 1 dash lemon juice 1 dash grenadine 3 oz Champagne

Add peach juice, lemon juice and grenadine to a flute glass. Fill with Champagne, and enjoy!

(I like the idea of “leftover champagne” being used up as sometimes it’s a wee bit hard to finish every bottle opened.) Further on the site I spy: “Champagne Cocktail Recipes” and found:

Red Champagne Cocktail = traditional color for roses and Valentine’s Day.

Pink Champagne Cocktail = happiness, tenderness, best friends and sweethearts.

Orange Champagne Cocktail = rich color of enthusiasm and energy.

Yellow Champagne Cocktail = freedom and joy.

Green Champagne Cocktail = living things growing healthily and with strength.

Blue Champagne Cocktail = honor and faith.

Purple Champagne Cocktail = nobility and courtly love.

Black Champagne Cocktail = strength and stability.

Brown Champagne Cocktail = grounding, being down to earth and dependable.

Gold Champagne Cocktail = a love and loyalty which is eternal.

White Champagne Cocktail = purity, renewal, spirituality.

I clicked on Blue, and got:

1oz Blueberry schnapps Champagne

Put the blueberry schnapps into the bottom of a Champagne flute. Add in the Champagne, and enjoy!

In my example above, I didn’t have blueberry schnapps on hand. Instead, I went with a blueberry port-style wine, made by Nashoba Valley winery. It has the high alcohol and lush blueberry flavor required for this delicious cocktail.

Now how, Dear Wine Friend, did we ever survive without the Internet? And second, who’s got that left-over Champagne?
