Chef 101 Humpday: Chocolate Truffles

This is second in a series of old fave recipes I kind of forgot about and now my husband Eddie has demanded asked me to make again.  As I recall this one was an incredible mess, but a tasty, sticky, well-worth it one that I got from Cosmopolitan magazine…back in the day.

Chocolate Truffles
Ingredients:
1 pound semisweet chocolate chips
1 cup heavy cream
1 tablespoon freshly grated orange rind
1/4 cup cocoa
a splash of Grand Marnier, added a little at a time, if desired.
Directions:
Place chocolate chips in a large bowl and set aside.  In sauce pan heat cream to a full boil.  Pour over chocolate and stir until melted.  Add orange and a little Grand Marnier.
Chill in refrigerator until set – about one hour. 
Now, here comes the sticky part,  roll into balls* and dust with cocoa, refrigerate again until ready to serve.  Makes about 3 dozen.
*I found that in the rolling process the chocolate would melt again just from the heat in my hands.  Sometimes I put the bowl back in the fridge again to re-harden.  Sometimes I just worked as quickly as I could.  And I bitched a lot.
Big. Friggin. Mess.
I will save making this for when Eddie is tackling the turkey this year, as it takes just as much effort and I want full credit for doing the work!  And pair it with several swipes off of the Grand Marnier bottle, some recipes require some sedation.

  2. Sedation is the key. One shot per kid, err, one shot of ALCOHOL for US for every kid we have at home.
