Valentine’s Day
2011
English Pea Soup
A cool soup w/ crème fraiche
Scallop & Squash
Seared Divers’ Scallop w/ a squash
tortellini & a beet nage.
Lobster & Tomato Salad
Our flavorful butter poached lobster tossed
w/ herbs & frisee stuffed in a tomato &
surrounded with a tomato-lobster consommé.
Squab
Roasted med-rare. Served w/ a pink
lady-calvados sauce.
Hangers Steak
USDA Prime. Marinated & grilled
 w/ aceleriac puree & a
merlot-garlic reduction.
Lamb Confit
Slow cooked & super tender. Served w/
fingerlings tossed w/ crème fraiche & a
ginger-syrah sauce.
Triple Chocolate Cake
Our super rich chocolate cake w/
a chocolate glaze, chocolate-cream
cheese, & a strawberry sauce.

Traditional clear soup w/ shrimp balls.
Very light in taste to prepare the palate
for the items to follow.
Toro Yamakaki
Melt in your mouth chu toro w/
grated mountain potato.
Sushi
Hon Maguro, Kanpachi, Shake Toro
Chawan-mushi
Egg royale w/ seafood and shiitake. Very light eggcustard steamed in a special cup.
Aji Namban Zuke
Whole spanish mackerel from Japan
marinated in a sweet vinegar.
Chashu men
Braised pork in a traditional
soy broth w/ ramen.
Lollipops?
Guava cheesecake w/ white chocolate,
Super brownie w/ dark chocolate,
& a chocolate truffle filled w/
strawberry essence.
