Black Velvet by Chef 101…a story in pics

 

"Black velvet prep" included #40 wine of the year per Wine Spectator, Gruet Sparkling
First you pour in the Guinness stout - a 1 to 1 ratio with the sparkling so I poured about half full.
Waiting for head to come down to add more sparkling...as my sample tasted like bark.
Finally almost ready, this black velvet color will match taste: chocolate and tobacco
I know it's verbotten but I scooped out a little of the head so I could get 'er done! We didn't love it, but, it worked with a little milk chocolate from See's as a chaser.
