Olio Nuovo literally means “new oil”, and it’s the freshest oil, right from the press. While most extra virgin olive oil is left to rest for 30-90 days before bottling, Olio Nuovo is bottled immediately.  Its intensity and raw flavor are unique attributes that fade over time.  Some call it more “alive” than oil that has rested.  All agree it is unique and a rare treat to taste.  Wonderfully pungent, intensely green and peppery.  $40 for 500 ML Tin / $34 with Press Club Membership.
