From Vom Fass Westlake: Seared Scallops with Bacon and Kale

Vom Fass, meaning from “the cask”, is a store I discovered a couple of years ago in Westlake Village.  Infused olive oils and vinegars, but also cask strength scotch, liqueurs, wine and a generous absinthe fountain – all for tasting and purchase.  While keeping up with them, mostly via email, I liked this recipe to share with readers.  Below the recipe, see more info on Vom Fass.

INGREDIENTS:

8 Large (U-10) Scallops

4 Strips Bacon, cooked

1 Bunch Kale, Stemmed and thinly sliced

1 Tblsp Vom Fass Grape Seed Cooking Oil

3 1/2  Tblsp Vom Fass Vinagre Viejo de Montilla (Spanish Red Wine Vinegar)

1 1/2 Tblsp Vom Fass Lemon Extra Virgin Olive Oil

Salt/pepper to taste

PREPARATION:

Place Grape Seed Oil in a pan and heat over medium high heat. 

Lightly salt and pepper scallops, place in pan and sear each side 2-3 minutes until done.

Set the scallops aside.

Reduce heat to medium, add the kale to the pan and add Vinagre Viefo de Montilla. Lightly salt and pepper and saute until tender (3-4 minutes).

To serve, lay down a bed of kale. Crumble bacon on the kale.  Top with scallops and drizzle with Lemon Extra Virgin Olive Oil.
