Seared lamb chops with home made orange, cranberry, rum and mint reduction by Christine Pike

Facebook friend Christine Pike teases her pals on Facebook with mouth-watering photos of dinners she whips up in her kitchen.  Not a chef, but raised by a caterer, it seems Christine simply can’t help herself.  Here is her latest complete with before and after pictures of her husband’s dinner plate:

Seared lamb chops with home made orange, cranberry, rum and mint reduction

10 oranges, dry cranberries in a pot.

Simmer till berries are soft.

Put both in blender until it’s smooth.

Put back in the pot until it renders, add rum, 1/2 Cabernet and salt to taste.

In the end add finely chopped fresh mint.

Lamb chops, salt & pepper both sides.

Depending on how you like your lamb cook (and thickness) will depend on how long to sear both sides.
