My husband Eddie’s Jambalaya Recipe

This recipe, something hubby has made for years, has never been written down.  One day a pal asked for it and boy oh boy it took him forever to dictate it.

  Needless to say I have no changes because…my husband is perfect.  Even if a little slow after a nap.

1 lb. chicken

1 lb. Polska Kielbasa

1/2 lb. shrimp (optional, added in the last five minutes of cooking)

1/2 lb. bacon

1 lb. ham steak (optional)

3 cups rice (2 cups stock for every cup of rice)

6 cups chicken stock

Cajun Trinity:

2 Onions

1 -2 bunch celery

2 Bell Peppers

Dice all ingredients. 

Spices:

½ tsp. black pepper

½ tsp. white

¼ tsp. red pepper

½ tbsp. Cajun spice

1/2 tsp. garlic powder

1/2 tsp. Old Bay seasoning

In one large soup pan:

Cook bacon, do not drain bacon drippings from pan.

Add some of the vegetables, 1-2 handfuls every five minutes until all vegetables are soft.

Add chicken, Kielbasa, cook for about 10 minutes.

Add spices.

Add broth and rice, cook about 20-25 minutes until rice soaks up the broth.

Serves: 8
