Okay, we made spaghetti sauce one night and then had to make lasagna the next night with all of the leftover sauce.
That led to leftover Ricotta cheese from the lasagna. Am I the only person this happens to?
Seems like I’m always making one recipe based on a leftover from another!
Looking for something different a friend suggested I make a Ricotta dip similar to the innards of a Cannoli. I found this simple recipe, and only made one slight change in italics below. Bought some Nonni Biscotti for the dipping:
Sweet Ricotta Dip with Chocolate Recipe

INGREDIENTS
- 2 cups ricotta cheese
- 2 tablespoons superfine sugar, plus more to taste if necessary
- 6 ounces bittersweet chocolate, finely chopped (I bought mini chocolate chips and skipped the chopping!)
DIRECTIONS
In a small bowl, combine all ingredients until well-mixed. Taste and add more sugar if you would like it more sweet. Just remember what kind of cookie you will be serving the ricotta with — if it’s very sweet, you probably don’t want to make the ricotta overly sweet.
