A cool and refreshing Watermelon Basil Margarita will start things off. Fresh watermelon puree infused with sweet basil and spiked with tequila.
A new twist on the enchilada is one stacked high with plenty of spicy shredded chicken, smoky chili sauce and dripping with lots of melty cheese.
Next up, flavorful Roasted Shrimp Tacos with Shredded Apple Slaw. Lots of complex flavor, but super-simple preparation. The slightly spiced shrimp is perfectly complimented by the cool, crisp slaw.
Most of us have enjoyed Mexican street corn. Sweet, charred corn on the cob, slathered with a cool layer of mayo or sour cream and sprinkled liberally with Parmesan cheese and Queso Fresco. We’ll turn those same ingredients into a delicious salad. The perfect pairing for both of our main dishes, no dental floss required.
For a sweet ending, Mexican “Fried” Ice Cream. A perfect sphere of cold ice cream coated with a crispy crust and drizzled with warm, cinnamon spiked chocolate ganache. Enough said.
