Marinaded Shrimp Salad

Summer RecipeIngredients
Cilantro Marinade/Dressing

1 head of Butter Lettuce

6 Tbsp Lime Juice

2 lg Haas Avocados

4 Tbsp Olive Oil

1/2 C Cilantro

Salt and Pepper to taste

1 Onion Sliced

3 Garlic Cloves- chopped

1/2 a lemon sliced

1/2 lb Asparagus

1/4 C Honey

1lb Shrimp any size

Combine all ingredients in a bowl and cover. (reserve some marinade/dressing to put on salad)

Marinade in refrigerator from 4 hrs to over night.

Take out and drain marinade reserving onions, shrimp and lemons.

Grill Shrimp 1 to 2 minutes per side, don’t over cook.

Let cool and combine with Butter Lettuce, Onion, Lemon and Avocado.

Add reserved dressing, and enjoy!
