Chef Eve 101 Makes: Heirloom Bean Chili with Prime Rib Meat

What to do with left over Prime Rib? I Googled that question and got recipes for pasta and cheese steak sandwiches. Wasn’t really feeling it. Then I went to my kitchen cabinet looking for inspiration and found a giant jar of premade Williams Sonoma chili. I mentioned the idea of making Prime Rib Chili to Eddie and a few Facebook friends and all agreed, yes, it has been done and it sounded GOOD.

I didn’t change anything of the recipe below, just added my trimmed and cubed Prime Rib. The flavor had a bit too much vinegar for us, but Eddie added sour cream and shredded cheddar which seemed to help. I say try it alone or with any leftover meat!
