2 1/2 cups unsweetened coconut
1/4 cup coconut palm sugar ( I found it at Sprouts)
Dash of stevia
1/2 tsp salt
1/2 cup coconut oil, at room temperature
1 Tbsp vanilla extract
1/2 cup dark chocolate chips
1/2 cup walnuts
Preheat oven to 375, line pan with parchment paper.
In a large bowl, mix together coconut, palm sugar and stevia.
Mix in oil, vanilla, and eggs.
Mix everything together. Stir in chocolate chip and walnuts.
Scoop onto pan and bake 20 min or until crunchy.
