Vegetarian Dinner by Heidi Wiedeman

Constantly bugging my friend Heidi to share her recipes with readers as well as her Facebook page, this one I think you can figure out even without the actual directions. It’s called:

Grilled zucchini slices drizzled with balsamic glaze, beefsteak tomato, fresh basil, sautéed onion and sweet pepper on toasted ciabatta roll topped with melted racelette cheese and a side of sweet corn flavored kettle chips (find at Sprouts).

And when I said I was going to wing it on the measurements Heidi added, “Yes, no need to measure anything…just go for it. I tossed the slices of zucchini with olive oil and garlic before grilling them in a hot grill pan to get grill marks…added lots of flavor.
