Making of a Wine Dinner: July 17th, Mixers, Santa Clarita. A Dinner and Wine Course in Traditional/Non-Traditional Wine Pairings
From Clos Pepe winemaker Wes Hagen (Mixers update is below):
My idea: Do a four course menu, sit down, small plates, where the courses alternate between traditional and non-traditional pairings with Clos Pepe wines. Mixers is a hopping new restaurant and bar down in Santa Clarita, owned by my wine-drinking buddy Louise, and I got to sample some amazing stuff coming out of the kitchen. Dinner’s going to rock!
This post shows a WORK IN PROGRESS. This very well may be the final menu, but it may be tweaked as well.
My final cut of the menu:
Caramelized Onion Crostini
Deep and rich caramelized onion with cave aged gruyere cheese on toasted baguette.
Drizzled with aged balsamic vinegar
2009 Clos Pepe Estate Chardonnay ‘Barrel Fermented’
Pan Seared Sea Scallops
Fresh scallops seared and served atop sautéed truffled spinach
Finished with a vanilla vinaigrette –
2009 Clos Pepe Estate Pinot Noir
Duck Confit Pappardelle
Fresh pasta tossed with house made duck confit, porcini mushrooms, black garlic, and onions.
Finished with a pink peppercorn cream

Light and refreshing lemon Sabayon quickly bruleed inside a pate sucree shell.
Garnished with candied zest and supremes
My thoughts on the menu and pairings: Gruyere crostini with Chardonnay is pretty safe (fat vs. acidity), but scallops with pinot noir? The truffles make it work in my mind, and the vanilla matches beautifully with a french oak note in the delicate 2008 Pinot Noir. Pinot noir always surprises me with seafood, and I expect this to be a great match.
The confit pasta is spot on traditional with a vintage pinot noir with delicacy and complexity like the 2005, which is in a gorgeous place right now. Then the topper: St. Louis ribs with a brand spanking new Chablis-style Chard. I expect this to be an eye opening match that will be spot on. Bright, citrusy acidity to cut the spice and cleanse the palate, and bright fruit to balance the richness of the meat and tomato sauce.
I will present each wine and pairing and why I think it’s traditional or not, and whether I think it works in reality vs. conceptually, and then hope to elicit some discussion at table. Diners will also be able to save tastes between courses to see if they can come up with better matches than I did.

Pietra Santa Winery Joins Vino 100
for a Meet the Winemaker Event
VALENCIA, CALIFORNIA (April 21, 2011) – A representative from Pietra Santa Winery (Cienga Valley) located in California’s Central Coast, travels to Vino 100 Valencia on Friday, May 6, 2011 from 6:00 to 9:00 p.m. for an in-store wine tasting as part of the store’s Meet the Winemaker series. Light appetizers will be served. Vino 100 is located at 28112 Newhall Ranch Road, Valencia, in the HighRidge Crossing Center at Copper Hill Drive.
Pietra Santa (Italian meaning Sacred Stone) is a family-run estate producing award-winning, artisan wines and olive oils. The 455-acre estate is located 25 miles inland from Monterey Bay. The mountainous terrain, ideally suited for wine grape plantings, produces Pinot Noir, Chardonnay, Pinot Grigio, Merlot, Sangiovese, Zinfandel, Dolcetto and Cabernet Sauvignon grape varieties on 150 planted acres. The oldest planting is Zinfandel vines dating back to 1905.
Completed in 2000, the Mission-style winery on the estate was designed for fine winemaking combining traditional methods with state-of-the-art technology.
