EUGENE, ORE. (PRWEB) – Wolf Spirit’s Puncher’s Chance® Bourbon has announced its first-ever limited release offering – The D12TANCE Straight Tennessee Bourbon. Aged for 12 years in traditional stone and wood rickhouses and finished in California Cabernet Sauvignon barrels, The D12TANCE is now available at fine spirits retailers at $120 SRP for a 750 ml.
Just 70 barrels of The D12TANCE, sourced from the IJW Whiskey Company in Louisville, Kentucky, were born from a mash bill of 84 percent corn, eight percent malt, eight percent rye and a proprietary yeast strain. With a complex aroma of vanilla, dark cherry fruit and toasted oak, this Tennessee Bourbon yields incredible flavor. At a respectable 96 proof, the warm hint of caramel and vanilla hits the palate first. As the proof gently fades, the tongue picks up a long, fruity finish reminiscent of the French Oak wine barrels in which the liquid rested for two months.
The D12TANCE is the second release from Puncher’s Chance – a new American Whiskey entry from Wolf Spirit, out of Eugene, Oregon, and comes on the heels of the fall 2020 release of the company’s foray into aged dark spirits with the release of Puncher’s Chance Kentucky Straight Bourbon. The brand name of Puncher’s Chance itself is a boxing reference, denoting that almost anyone is possible of a knockout punch, no matter what the odds. Naming our latest aged spirit entry The D12TANCE is a double entendre – referring both to the age of the liquid and the 12 official rounds in a formal boxing match.

“With The D12TANCE, we are finishing a 12-year-old Bourbon in wine casks, which is quite unique, as you usually see much younger whiskies receiving this treatment. This was critical to us because we didn’t want the fine Bourbon overpowered by the wine barrel finishing. Our goal was to use the finishing to coax more of the existing characteristics out of the whiskey,” Luchini continues.
The D12TANCE comes housed in the traditional Puncher’s Chance jet-black bottle with a gentle fade at the bottom to reveal the amber liquid within. The Puncher’s Chance tiger, a common symbol in boxing and MMA fighting, again graces the label, but this time in striking gold leaf making it easily identifiable on the backbar.

The Wine & Spirits Education Trust (WSET) is globally recognized as the international standard in wine & spirits knowledge. Odyssey Wine Academy will offer Level 1 Introduction to Wine through Level 3 Advanced courses, flexible course times throughout the year during the day, evenings and weekends to accommodate wine and hospitality professionals, as well as consumers.
Julie Rothberg, President of Medlock Ames Winery, founded Odyssey Wine Academy out of a desire for those presenting wines to have a global perspective. “At Medlock Ames, I wanted our hospitality team to be certified through the WSET to broaden their understanding about wines from around the world,” says Rothberg. “An international perspective aids our team in educating guests about what makes wines from Sonoma County so unique.”
In 2021, after discovering a lack of in-person public courses available in Sonoma County for her team at Medlock Ames, she decided to develop a solution in the creation of Odyssey Wine Academy, Sonoma County’s first and only publicly available offering of WSET courses. Her vision is to make wine education accessible, fun, and interactive for the deeply curious, whether they have a career in wine, want to explore the industry, or love wine and want to learn more. My husband Eddie has painstakingly categorized our photos by year on our cell phones, so I recently looked at photos from ten years ago to see if any were worth posting alongside a photo taken recently, for the latest #10YearChallenge on social media. As you can guess, most of my photos back then were of wine, so I thought I would take a look back at what I was drinking then.
(I also searched my name, 2011 and photos on Facebook to add to my wine blast from the past.) This is what I wanted to share:
Meeting with winemaker Gerard Zanzonico in the stunning caves at Del Dotto for maybe the first time, wine tasting at 10 am in the private room for club members at Mondavi, having a seated tasting on an expansive patio with incredible views at Joseph Phelps, an underground tour and tasting in the caves at Schramsberg, meeting with the most gracious host/owner Suzanne Phifer Pavitt at Phifer Pavitt, an evening tasting at the downtown Napa PureCru tasting bar with winemaker Mitch Consentino.
Blending wine at TH Estate with winemaker and owner Terry Hoage, visiting Cass for the first time, a mind-blowing multi-course Earth Day dinner at Justin, visiting with the now shuttered Edward Sellers, winery tour and tasting with Lawrence Lohr of J Lohr, discovering that Whalebone really does have whale bones around the property and Calcareous has calcareous rock in their vineyards, time spent with the one and only Gary Eberle, tasting wines, spirits and having dinner at Opolo, seeing Sculpterra for the first time, the dry farming at Minassian Young, Niner when it first opened, the first concrete eggs were at Villa Creek, meeting and tasting incredible wines with Janell Dusi at J Dusi, tasting Nuggucciet Cellars made by a local newspaper man and Mystic Hills Vineyard lovingly owned by local friends.
Though not known for wine we were well taken care of on a trip to Jamaica ten years ago with French Champagne, Appleton rum blended drinks and icy cold Red Stripe Beer.
The annual Union des Grand Crus de Bordeaux tasting is always not only huge but amazing, and since I love Rhone wines the Rhone Rangers can’t be missed, local have Vine 2 Wine with lots of local support, Garagiste Festival offered drinkers events in LA as well as Paso, Pinot Days up in the Skirball Center, Paso’s Earth Day Food and Wine fest was new, and long-time favorite LA Wine Fest with Yoshi Murakami doing sake classes and Chris Uhde teaching about scotch.
Fontanafredda Barolo at Spago Beverly Hills with fellow wine writers, Martinis at Blue Mermaid Chowder House and Bar in San Francisco on vacation, wine and cheese at Wine 661 for locals, A Taste of Monterey Wine Tasting when I visited Eddie there for Naval Postgraduate School, Iron Horse sparkling that came complements of Bourbon Steak in San Francisco for our wedding anniversary dinner.

Caroline’s 35-year-long career showcases her incredible leadership and expertise having worked as a Master Blender and whisky specialist on various staple Scotch and Irish Whiskey brands such as J&B, Bell’s, Johnnie Walker and Old Parr, as well as Roe & Co. and Indian Signature blends. Her wealth of whisk(e)y knowledge, experience, and dedication to the craft has brought her wide recognition across the industry, earning her the prestigious titles of Keeper of the Quaich and Blender of the Year by The Spirits Business in 2019 for her role with Roe & Co. Caroline Martin also proudly carries her reputation as a mentor and pioneer for women in whisk(e)y, pushing the boundaries of this industry.
