WhiskeyFest Las Vegas 2022…Done!

Last month Eddie and I attended the WhiskeyFest Las Vegas event at Resorts Word – for the first time! We had two VIP tickets, which allowed us entry one hour early and samples of rare and aged whiskies. My plan? As soon as I checked in and picked up my swag bag – and program – I scoured the slim booklet to see who was pouring what that first hour, made some quick notes, and then attacked the two conference rooms allocated for the event. Second to that plan was doing as much damage, err, getting as many tastes as I desired in that hour, before taking a break, enjoying the different buffet meals, and then heading into a sit down class with one of the brand ambassadors. After the class I did go back into the two main rooms, but didn’t do as much tasting as I had in that first hour and in the class. First I will share the pours Eddie and I  enjoyed in bold and italics, and then I’ll share which class I took and my notes on that.

Suntory Seminar

I don’t really know why I’m so enamored with Japanese whisky exactly, it may have been my exposure to Sake when I did my certification class, the books I was sent for review on Japanese drinks and Japanese whisky, the uniqueness of the Japanese Mizunara cask, the differences in how Japanese whisky tastes compared to Scotch whisky…or just fond memories of my high school boyfriend Jim Matsuo that still hasn’t come to a single reunion. LOL.

Back to me: The five we tried that led up to the final blend included 1. Chita clean (made from corn). 2. Yamazaki Puncheon cask was a bit harsh to me. 3. Yamazaki sherry cask (my personal “wow that’s good” favorite) 4. Yamazaki Mizunara oak (My second favorite but a bit tight. Hibiki is also the first known brand to make this.) 5. Hakushu heavily peated (not too peated in my opinion). And the final blend they all went into: 6. Hibiki Harmony (We have a bottle at home).

I had a similar class two years ago, and covered it here in this blog, but here are a couple of things that sounded new to me:

Yamazaki Distillery will be celebrating their centennial this year as they opened in 1923. I bet that will garner a nice celebration. Also single malt whisky lost in sales to a less alcoholic drink in Japan: the highball that is now the most popular drink in Japan.

CUTWATER SPIRITS SURPASSES 2,000 AWARDS ACROSS PORTFOLIO

Kilinga Bacanora, An Agave Spirit from Sonora, Mexico, Launches in the U.S.

Sonora, Mexico – Mexican spirits brand, Kilinga, announces the U.S. launch of their award-winning Bacanora, an agave spirit native to the state of Sonora, Mexico. Bacanora has been enjoyed for over 300 years, but has not been shared beyond Mexico until now.
Kilinga is a boutique, family-owned Bacanora distiller and brand founded in 2018 by Rodrigo Bojorquez Bours in Álamos, Sonora, Mexico. Inspired by and named for his mother, Kilinga, La Señora Kilinga is the vibrant matriarch and heart of the family. “I am really proud that we squeeze fresh lime juice for all of our cocktails as this is something that is very important to us, and it really helps us produce the best quality beverages we can provide,” says Etchegoyen. “Tobin introduced us to the Spinzall which clarifies juice to give a perfect texture and color. We clarify our cucumber juice and raspberry hibiscus for our house-made Agua Frescas, and I am in awe of how Tobin took classic cocktails, the Old Fashioned and the Mai Tai, and he put a tequila twist on them. They are well balanced and it’s a fun way to lean into agave-based spirits. We truly have something for everyone – a red Sangria for easy drinking, a frozen strawberry margarita for those hot days on the patio, and the option to have your very own version of the perfect margarita with a choice of over 30 different tequilas, mezcal, and/or spicy tinctures.”

El Granjero Cantina was designed by Amy Knoll Fraser who wanted to take full advantage of the existing architecture of the space and exposed joist of the ceiling. Fraser drew inspiration from many trips to Mexico City and she wanted the space to feel like a lively bustling cantina where the energy from the street outside gives back to the restaurant inside, spilling into each other. She saw the space as casual, but cosmopolitan and created a subtle division between the two with tall folding panel doors and dangling light fixtures meant to evoke lightning bugs in a jar creating a warmth that immediately attracts guests into the space. Fraser created bold pops of color throughout the restaurant which inspired the stripes running down the back bar and interior side wall and the bold and bright mural on the outside walls based on a traditional Mexican Otomi embroidery with a nod to Matisse cut outs. The chair design was created by Hee Welling inspired by refrigerator racks, and all the woodwork throughout the space was thoughtfully designed in hickory by John Moshay’s son designer Ned Moshay making this project a full family affair.

Tasting Casa Mexico Tequila

Received some interesting tequila from Casa Mexico for review, what made it interesting you may ask?

Well, for one the two aged expressions, the Reposado and Añejo, benefitted from time in new American oak barrels that weren’t “tainted (by) the flavor of old whiskey” and char – which I couldn’t wait to sample for myself.

Tasting:

Blanco

“The Blanco tequila is a straightforward expression without any aging.”

Toasted corn, cream, vanilla bean, citrus, mown grass and without any nose burn at all; tingly mouthfeel, some of the same notes from the nose on the taste – the cream, vanilla and citrus – with an extra-long finish. Highly sippable.

Reposado

“The Reposado ages for a minimum of six months…in new American White Oak Barrels…The new American oak barrels allow a truer expression of the tequila to shine through without tainting the flavor with the char of old whiskey.”

A bit sweeter nose than the Blanco, with aromas of Kettle Corn, vanilla icing, dates and figs; and again no burn. The taste was smoother than the Blanco, but spicy on the palate, with background flavors of white pepper, vanilla yogurt and dried citrus fruit – and an even longer finish. Pleasantly quaffable on its own.

Añejo

“Añejo ages for a minimum of 12 months…in new American White Oak Barrels, a twist on traditional aging methods.”

Nose: Vanilla bean ice cream, sweet cream, incense, no pepper or spice and that clean American oak simply resonating throughout. Flavor: Extremely smooth, reminded me of a sweet rye whiskey, pepper and hard butter toffee candy. Extremely pleasant. Made a Añejo Old Fashioned with this one. (Build over ice in a Martini shaker: two ounces Casa Mexico Añejo, one dash aromatic bitters and ½ teaspoon simple syrup or agave. Shake, pour into iced Martini glass, garnish with orange peel.)

After the liquid finishes aging, the cristalino is naturally filtered using activated carbon to remove most of the color while still maintaining the aromas and flavors gained through aging. The transparent Añejo is then diluted with demineralized volcanic spring water until 40% ABV.

Silky and delicate with a transparent, full body and light yellow shimmers, Partida Añejo Cristalino offers sweet and woody aromas stemming from its prolonged aging process. After the intense, natural fragrance of vanilla and toasted America oak, a second layer emerges with dry fruits such as raisins, quince and figs. Sampling Single Estate El Sativo Tequila Blanco

I have two go-to Tequilas: Cazadores and Asombroso, the former was a gift from my daughter’s fiancé and the latter was one I reviewed that I have since purchased for my liquor cabinet. I’m not much of a tequila-cocktail lover and prefer to sip alone or on ice, and was happy to receive another tequila for review that I could add into my “sipper” category of spirits.

After reading the press release for El Sativo below, I was intrigued by several points it made including the idea that the “terpenes, found in the agave, have a myriad of health benefits, including mood-lifting and energy-boosting attributes”, that they give back to ocean conservancy and are a triple time double gold medal winner. Definitely made me ready to sample.

Tasting Notes

Notes of vanilla bean, heavy sweet cream and toasted popcorn kernel – with no burn whatsoever – on the nose. The taste was smooth yet peppery – so interesting – and flavors reminiscent of buttered popcorn, and that same cream, ending with a spicy finish.

Really liked having it both smooth and spicy! Then tried it with a little bit of squeezed lemon and it was like a lo-cal Margarita. This is not a Tequila to shoot!

Not so sure about added energy, may have to do further study = drink more!

THE PROCESS

“Our distillery is located in the lowlands of Amatitán, Jalisco; we’re single estate, our agaves are planted, nurtured, and harvested solely in our fields and never sourced. It was important for us to be completely organic, so our cultivation is carried out without pesticides or fungicides, and we only use organic fertilizers. The organic certification process is far more complex and time consuming than the process for common tequila.” says co-founder and singer-songwriter Jaime Whitton.

Using small batch stone ovens, the blue agaves are slowly steamed for 24-48 hours, using no diffusers nor autoclaves. The process pays homage to the art of tequila making by using the traditional technique. Fermenting with its own natural yeast, the team uses reverse osmosis water filtered through 135 feet of volcanic rock for a pure filtration process.
