CUTWATER SPIRITS SCORES TOP HONORS AT SAN FRANCISCO WORLD SPIRITS COMPETITION 2022

SAN DIEGO/PRNewswire/ — San Diego-based distillery, Cutwater Spirits, is proud to announce exciting new wins from the prestigious San Francisco World Spirits Competition (SFWSC).  Cutwater brought home top honors for five of its bottled spirits including a Double Gold for Cutwater Mezcal Joven and Gold medals for Cutwater Tequila Blanco, Cutwater Tequila Reposado, Bali Hai Tiki Gold Rum, and Devils Share American Whiskey. SFWSC is the oldest, largest and one of the most respected competitions of its kind, and this year, Cutwater earned 36 total awards across the brand’s portfolio of bottled spirits and canned cocktails.

Kilinga Bacanora, An Agave Spirit from Sonora, Mexico, Launches in the U.S.

Sonora, Mexico – Mexican spirits brand, Kilinga, announces the U.S. launch of their award-winning Bacanora, an agave spirit native to the state of Sonora, Mexico. Bacanora has been enjoyed for over 300 years, but has not been shared beyond Mexico until now.
Kilinga is a boutique, family-owned Bacanora distiller and brand founded in 2018 by Rodrigo Bojorquez Bours in Álamos, Sonora, Mexico. Inspired by and named for his mother, Kilinga, La Señora Kilinga is the vibrant matriarch and heart of the family. The company’s first official bottling was in the fall of 2019 which was awarded silver at the San Francisco Spirits Competition. It is the first officially designated Bacanora by the Consejo Sonorense Regulador del Bacanora available in the United States, and the second brand in Mexico to have the authentic Bacanora designation.

Rodrigo is not only the founder of Kilinga but also its Maestro Bacanorero. It has its own unique history born in the mountainous northeast of Sonora over 300 years ago. Bacanora Silvestre
Made with wild 7-8 year old Agave Angustifolia Haw, the young, green plants give Silvestre the lightness of a springtime bouquet. At 80 proof (40% ABV), it is clear with aromas of wildflowers, violets, and green agave. It is very floral and vibrant on the palate with herbal notes and a subtle violet finish in the aftertaste. Bacanora Blanco
Handcrafted with capón of 10-12 year old mature Agave Angustifolia Haw, Blanco is imbued with the rich sweetness of an autumn campfire. Bacanora Reposado
Artfully aged in American White Oak barrels at 80 proof (40% ABV), Reposado is a unique experience for agave aficionados. Bacanora Añejo
This rare Bacanora is bold and complex having been aged in ex Baja red wine French Oak casks for a decadent depth of flavor. This expression is an evolution of the Bacanora Blanco allowing the deep caramel aromas to develop into a toasted caramel flavor profile. Bottled at 88 proof (44% ABV) it has a sweet, earthy nose with delightful hints of dark chocolate, tobacco, vanilla, and charred sugar flavors present.

Executive Chef Jenni Sklar’s ingredient driven menu embraces regional Mexican flavors using seasonal and fresh ingredients showcasing a selection of Antojitos (Snacks) including Guacamole, Fiesta Nachos, Papas Fritas and Pork Belly, and the Ensaladas (Salad) spotlight Chef Sklar’s signature Caesar Salad prepared with romaine lettuce, cured egg yolk, sunflower seeds, and breadcrumbs, or Kale Salad made with avocado, griddled cheese, house pickles, corn, and black bean salsa. The Oaxacan Quesadillas are house favorites featuring the HIBISCUS made with sauteed hibiscus flowers, onion, and cheese, or the Queso prepared with cheese, black bean puree, salsa negra, and escabeche relish served with lettuce. Chef Sklar’s Tacos do not disappoint and there are two for every guest to enjoy featuring a sublime selection including Avocado, Beef, Carnitas, Chicken or Crispy Fish. The Dorados (Golden Tacos) are lightly fried to perfection and offer up three delicious options, Chili Braised Beef & Cheese, Tomatillo Chicken & Cheese, and Soyrizo & Vegan Cheese. Chef Sklar’s Cheese and Chicken Enchiladas are a family favorite and her Carnitas and Chili Beef Burritos are packed with flavor. As, with any proper Mexican meal, Chef Sklar’s Acompanantes (Sides) are the perfect addition to each dish featuring fresh Avocado, Blistered Jalapeno, Cauliflower Rice, Corn Tortillas, Flour Tortillas, Guacamole, Black Beans, Black Bean Puree, and Herb Rice. “We make everything in-house from our pickles to our salsas, carnitas, and our tortillas,” states Sklar. El Granjero Cantina’s tortillas are extremely special as Sklar spent months looking for the perfect blend of fresh corn masa and maseca (dry corn flour) to create a unique texture that resembles a flour tortilla. Says Sklar, “Our Tortillas are soft, pliable, full of moisture and fantastic flavor. The density reminds me of a tamale and every tortilla is handmade to order every time.”

“I am constantly impressed with Jenni’s cooking as she knows the perfect way to balance every dish with acid, salt and texture,” states Etchegoyen. “She is excited by Mexican food, and it definitely shows. It was important to her to make everything from scratch, and I love the vegan items she created for our menu. She put extra time and attention into preparing them to make sure they were thought through, exciting and delicious.”

BAR: El Granjero Cantina’s bar program, created by Cocktail Consultant Tobin Shea, honors traditional agave-based spirits from Mexico with a specially curated list of Tequilas y Mezcal showcasing a special selection of Blanco Tequila, Reposado Tequila, Anejo Tequila, and Mezcal, while also featuring fun and frothy Frozen Margaritas, Cocktails on Tap, and collection of Classic Margaritas and Specialty Cocktails such as the EGC Old Fashioned comprised if reposado tequila, mezcal, Meletti Amaro, and orange, Lifesaver made with mezcal, Fiero, lime and pineapple syrup, and Rasp-Hib Cocktail prepared with guests choice of tequila, Italicus, hibiscus tea, lime and soda to name just a few. In addition, El Granjero Cantina also offers select Beer, Wine, house-made Sangria, and non-alcoholic beverages such as El Granjero Cantina’s handmade Horchata and freshly carbonated Agua Frescas.

“I am really proud that we squeeze fresh lime juice for all of our cocktails as this is something that is very important to us, and it really helps us produce the best quality beverages we can provide,” says Etchegoyen. “Tobin introduced us to the Spinzall which clarifies juice to give a perfect texture and color. We clarify our cucumber juice and raspberry hibiscus for our house-made Agua Frescas, and I am in awe of how Tobin took classic cocktails, the Old Fashioned and the Mai Tai, and he put a tequila twist on them. They are well balanced and it’s a fun way to lean into agave-based spirits. We truly have something for everyone – a red Sangria for easy drinking, a frozen strawberry margarita for those hot days on the patio, and the option to have your very own version of the perfect margarita with a choice of over 30 different tequilas, mezcal, and/or spicy tinctures.”

El Granjero Cantina was designed by Amy Knoll Fraser who wanted to take full advantage of the existing architecture of the space and exposed joist of the ceiling. Fraser drew inspiration from many trips to Mexico City and she wanted the space to feel like a lively bustling cantina where the energy from the street outside gives back to the restaurant inside, spilling into each other. She saw the space as casual, but cosmopolitan and created a subtle division between the two with tall folding panel doors and dangling light fixtures meant to evoke lightning bugs in a jar creating a warmth that immediately attracts guests into the space. Fraser created bold pops of color throughout the restaurant which inspired the stripes running down the back bar and interior side wall and the bold and bright mural on the outside walls based on a traditional Mexican Otomi embroidery with a nod to Matisse cut outs. The chair design was created by Hee Welling inspired by refrigerator racks, and all the woodwork throughout the space was thoughtfully designed in hickory by John Moshay’s son designer Ned Moshay making this project a full family affair.

Tasting Casa Mexico Tequila

Received some interesting tequila from Casa Mexico for review, what made it interesting you may ask?

Well, for one the two aged expressions, the Reposado and Añejo, benefitted from time in new American oak barrels that weren’t “tainted (by) the flavor of old whiskey” and char – which I couldn’t wait to sample for myself.

Tasting:

Blanco

“The Blanco tequila is a straightforward expression without any aging.”

Toasted corn, cream, vanilla bean, citrus, mown grass and without any nose burn at all; tingly mouthfeel, some of the same notes from the nose on the taste – the cream, vanilla and citrus – with an extra-long finish. Highly sippable.

Reposado

“The Reposado ages for a minimum of six months…in new American White Oak Barrels…The new American oak barrels allow a truer expression of the tequila to shine through without tainting the flavor with the char of old whiskey.”

A bit sweeter nose than the Blanco, with aromas of Kettle Corn, vanilla icing, dates and figs; and again no burn. The taste was smoother than the Blanco, but spicy on the palate, with background flavors of white pepper, vanilla yogurt and dried citrus fruit – and an even longer finish. Pleasantly quaffable on its own.

Añejo

“Añejo ages for a minimum of 12 months…in new American White Oak Barrels, a twist on traditional aging methods.”

Nose: Vanilla bean ice cream, sweet cream, incense, no pepper or spice and that clean American oak simply resonating throughout. Flavor: Extremely smooth, reminded me of a sweet rye whiskey, pepper and hard butter toffee candy. Extremely pleasant. Made a Añejo Old Fashioned with this one. (Build over ice in a Martini shaker: two ounces Casa Mexico Añejo, one dash aromatic bitters and ½ teaspoon simple syrup or agave. Shake, pour into iced Martini glass, garnish with orange peel.)

Tasting Tequila Codigo 1530 Rosa Blanco

During last month’s Nightclub and Bar show in Las Vegas I tasted Tequila Codigo 1530 “Rosa” Blanco. I learned that this particular tequila spends one month in uncharred Napa Cabernet French oak barrels and is the only tequila that has been approved to use a particular cross emblem from the Jalisco state in Mexico, as seen on the front and the bottom of the bottle. The brief tasting, and only knowing some of the stories behind the tequila, made me want to learn and taste more. Before reviewing it in full for Eve Wine 101 readers, I did a little research via their website.

Just going to their website will blow you away as it opens up with a gorgeous short film to learn how this tequila came to be, in three glorious minutes. The family in Jalisco behind it, their water source, the filtering process, organic yeast from a local bakery, no flavoring or chemicals are added and having “the right people…that have been growing agave all of their lives.”

They have five different types of tequila in their line-up – learn more about each of these award-winners via the film and the website. The Rosa is made with their Blanco that benefits from uncharred oak barrels from Napa, aged one month, and gained a beautiful color – and flavor – without any additional additives to make it so.

The Cross

From their Facebook, regarding the cross embossed on their bottles I learned, “…Código 1530 proudly bears the Jerusalem Cross as the symbol of its heritage story. This iconic cross sits atop the Jalisco Coat of Arms and dates back to 1530 when after colonial struggle, Amatitán was officially recognized as a city of New Galicia and Jalisco was given a coat of arms by the Spanish monarchy, which was anchored by the Jerusalem Cross. Código 1530’s name honors ‘Los Códigos’, the old world codes and customs that shaped and still live on in Amatitán and the Los Bajos region to this day. These values are at the core of the proud families who served this tequila in their homes, and the artisan distilling family who has been the custodian of this private tequila for generations.”

The Tasting

After my brief tasting at the show, though I did benefit from having “ Bar Explorer” Collin De Laval (Instagram: @tilting_at_windmills_) there with me, I looked forward to sitting over a tasting and really getting my nose and mouth wrapped around this beautiful tequila. So here you go:

Greeted by the most delicate color of rose gold, and very leggy in my glass, I was ready to search my memory of what the aromas reminded me of and found: sweet cream, cling peaches, dried dark cherries, white chocolate and biscuit. On the palate I was rewarded with tingly flavors of dried red fruits and mixed nuts, with a rich and lingering creaminess coating my palate. Going in for a second sip, and using master mixologist Richard Paterson’s technique of allowing the spirit more time in my mouth before swallowing, I noted that the flavor just got richer and multi-layered. Though there are plenty of cocktails you can make with tequila, this is one I would sip, this is heady stuff.

The Diamond of Duality: Tequila Partida Launches Añejo Cristalino

Partida Añejo Cristalino is produced using fully mature blue weber agave cultivated in the Tequila Valley. The freshly harvested agaves are slowly and evenly cooked for 24 hours before they’re aged in white American oak medium toast ex-bourbon barrels for a minimum of 18 months. After the liquid finishes aging, the cristalino is naturally filtered using activated carbon to remove most of the color while still maintaining the aromas and flavors gained through aging. The transparent Añejo is then diluted with demineralized volcanic spring water until 40% ABV.

Silky and delicate with a transparent, full body and light yellow shimmers, Partida Añejo Cristalino offers sweet and woody aromas stemming from its prolonged aging process. After the intense, natural fragrance of vanilla and toasted America oak, a second layer emerges with dry fruits such as raisins, quince and figs. Flavors of butterscotch, agave, vanilla, citrus and banana encapsulate the palate before a gentle, pleasantly dry finish completes the complex tasting experience.

Cristalino is the fastest growing tequila category in Mexico which has helped tequila become the largest spirit category in the country. It’s exponential growth has led to the category’s rise in the US.

Sampling Single Estate El Sativo Tequila Blanco

I have two go-to Tequilas: Cazadores and Asombroso, the former was a gift from my daughter’s fiancé and the latter was one I reviewed that I have since purchased for my liquor cabinet. I’m not much of a tequila-cocktail lover and prefer to sip alone or on ice, and was happy to receive another tequila for review that I could add into my “sipper” category of spirits.

After reading the press release for El Sativo below, I was intrigued by several points it made including the idea that the “terpenes, found in the agave, have a myriad of health benefits, including mood-lifting and energy-boosting attributes”, that they give back to ocean conservancy and are a triple time double gold medal winner. Definitely made me ready to sample.

Tasting Notes

Notes of vanilla bean, heavy sweet cream and toasted popcorn kernel – with no burn whatsoever – on the nose. The taste was smooth yet peppery – so interesting – and flavors reminiscent of buttered popcorn, and that same cream, ending with a spicy finish.

Really liked having it both smooth and spicy! Then tried it with a little bit of squeezed lemon and it was like a lo-cal Margarita. This is not a Tequila to shoot!

Not so sure about added energy, may have to do further study = drink more!

THE PROCESS

“Our distillery is located in the lowlands of Amatitán, Jalisco; we’re single estate, our agaves are planted, nurtured, and harvested solely in our fields and never sourced. It was important for us to be completely organic, so our cultivation is carried out without pesticides or fungicides, and we only use organic fertilizers. The organic certification process is far more complex and time consuming than the process for common tequila.” says co-founder and singer-songwriter Jaime Whitton.

Using small batch stone ovens, the blue agaves are slowly steamed for 24-48 hours, using no diffusers nor autoclaves. The process pays homage to the art of tequila making by using the traditional technique. Fermenting with its own natural yeast, the team uses reverse osmosis water filtered through 135 feet of volcanic rock for a pure filtration process.
