818 Tequila Partners With S.A.C.R.E.D. to Support Agave-Producing Communities in Mexico

Fast-Growing Tequila Brand Also Transitions to State-of-the-Art Distillery to Further Sustainability Efforts

LOS ANGELES, /PRNewswire/ — 818 Tequila, the award-winning, sustainable tequila brand founded by Kendall Jenner, announced its partnership with S.A.C.R.E.D. — a nonprofit that supports Mexican communities where heritage agave spirits are made. The rapidly-growing spirits maker has also moved their production to Grupo Solave‘s state-of-the-art distillery in Jalisco, Mexico. 818’s new distillery partner is notable for combining traditional tequila-making methods with environmental-impact innovation. This move allows 818 to continue to scale without sacrificing attention to tradition and sustainability as they roll out across the U.S.

Founded by Lou Bank, S.A.C.R.E.D. (Saving Agave for Culture, Recreation, Education and Development) hosts educational tastings and fundraises to underwrite programs that help replant agave, build libraries, ensure water security and repair damage done by earthquakes. In conjunction with S.A.C.R.E.D., 818 Tequila created the 818 Bricks Program which uses raw, post-production agave fibers, water waste and adobe soil to create bricks that can be used for building local community infrastructure like tasting rooms and schools. S.A.C.R.E.D. helps with brick production, as well as identifies the infrastructure projects for donation that serve as a value-add to local communities.

Tasting Casa Mexico Tequila

Received some interesting tequila from Casa Mexico for review, what made it interesting you may ask?

Well, for one the two aged expressions, the Reposado and Añejo, benefitted from time in new American oak barrels that weren’t “tainted (by) the flavor of old whiskey” and char – which I couldn’t wait to sample for myself.

Tasting:

Blanco

“The Blanco tequila is a straightforward expression without any aging.”

Toasted corn, cream, vanilla bean, citrus, mown grass and without any nose burn at all; tingly mouthfeel, some of the same notes from the nose on the taste – the cream, vanilla and citrus – with an extra-long finish. Highly sippable.

Reposado

“The Reposado ages for a minimum of six months…in new American White Oak Barrels…The new American oak barrels allow a truer expression of the tequila to shine through without tainting the flavor with the char of old whiskey.”

A bit sweeter nose than the Blanco, with aromas of Kettle Corn, vanilla icing, dates and figs; and again no burn. The taste was smoother than the Blanco, but spicy on the palate, with background flavors of white pepper, vanilla yogurt and dried citrus fruit – and an even longer finish. Pleasantly quaffable on its own.

Añejo

“Añejo ages for a minimum of 12 months…in new American White Oak Barrels, a twist on traditional aging methods.”

Nose: Vanilla bean ice cream, sweet cream, incense, no pepper or spice and that clean American oak simply resonating throughout. Flavor: Extremely smooth, reminded me of a sweet rye whiskey, pepper and hard butter toffee candy. Extremely pleasant. Made a Añejo Old Fashioned with this one. (Build over ice in a Martini shaker: two ounces Casa Mexico Añejo, one dash aromatic bitters and ½ teaspoon simple syrup or agave. Shake, pour into iced Martini glass, garnish with orange peel.)

Masters of Taste is introducing Chef Vanda Asapahu as Host Chef of Masters of Taste 2022 which also happens to mark the 5th Anniversary of this celebrated event which had to be canceled in 2020 due to the Pandemic. Masters of Taste 2022 Culinary Master and Host Chef Vanda Asapahu is the chef and owner of Ayara Thai Cuisine and she has participated since its inception in April 2016. Asapahu went to college at UCLA and to graduate school at Yale, then she spent four years living, traveling, and working her way through Thailand before returning home to Los Angeles. During Asapahu’s stay in her native country, she took extensive notes, which included absorbing Bangkok’s street food scene and reviving old family recipes. After cooking with relatives and eating her way through the streets and countryside, Asapahu brought back these treasured old recipes and new flavors to share at Ayara Thai. The Ford Announces Culinary Partnership with Plant-Based Chef Jocelyn Ramirez of Todo Verde for 2021 Concert Season

Plant-Based Menu and Beverages are Featured at the Ford Terrace Café and Grab & Go Market

LOS ANGELES, CA – The Ford, the 1,200-seat Los Angeles amphitheater nestled into the Hollywood Hills, announces a new culinary program designed by celebrated chef and community activist Jocelyn Ramirez of Todo Verde. Beginning July 30, 2021, attendees of The Ford’s performing arts programs began to order food and beverages at Todo Verde at the Terrace or the Grab & Go Market with Ramirez’ flavor-rich and healthy plant-based menu of dishes and drinks.

Jocelyn Ramirez founded Todo Verde in 2015 with a mission to create delicious and healthy foods inspired by her Mexican and South American roots for her Eastside Mexican community. As one of the most popular vendors at Smorgasburg LA, Ramirez continues to learn about the health benefits of nutrient-dense food and healthy ecosystems and shares her knowledge of healthy living through workshops, dialogues and food demonstrations throughout the community.

Ramirez is thrilled to have the opportunity to introduce her menu at The Ford, stating, “This is such a moment for chefs of color in Los Angeles, and I’m honored to be a part of The Ford’s season as the first plant-based food concessionaire to take over a major music venue in the city of Los Angeles. Just six years ago, Todo Verde was founded and has become a staple across LA’s farmers’ markets and Smorgasburg LA. Now we are happy to call The Ford home, serving up some of our signatures like tacos de carnitas, ceviche, mulitas de chorizo and more.”

In addition to three types of tacos – Mushroom y Mole, Jackfruit Carnitas con Pipian Verde and Chorizo-Spiced-Seared Mushroom, – Todo Verde offers several dishes to share: Ceviche de Palmitas with hearts of palm in citrus and olive oil served with avocado, tomato, cilantro, jalapeño, cucumber, black sesame & tortilla chips;  Como La Flor of quinoa, cilantro micro greens, tomato, cucumber & orange, served with citrus-dressed mixed greens; Mulita of house-made cashew cheese melted between blue corn tortillas with house-made plant-based “chorizo,” cashew crema & pickled red onion; Nachos with house-made plant-based nacho cheese over tortilla chips with choice of plant-based “chorizo” or jackfruit, cashew crema & pico de gallo; and Poblano Mac y Cheese with fire-roasted poblano cashew queso and wheat semolina macaroni.

Desserts include Cacao Pudding, a cacao-and avocado-based pudding spiced with cinnamon, vanilla, maple syrup with strawberry reduction, dehydrated strawberries & pistachio crumble; and Plant-Based Cheesecake of creamy cashew-based lemon cheesecake with toasted almond cashew crust, cacao ganache and lemon zest.

To complement these menus are Todo Verde’s refreshing agua frescas, Strawberry Rose and Black Rice Horchata, which are available in both non-alcoholic and spiked versions using craft spirits. Guests may select craft beers from SouthNorte Beer Co. (San Diego) and Baja Brewing (Tijuana) and natural wines from small producers Sassara and Las Jaras wineries.

The Grab & Go Market features some of Todo Verde’s favorite food businesses that embody the cultural flavors that define Los Angeles. About Jocelyn Ramirez:

Todo Verde founder Jocelyn Ramirez is a plant-based chef, college professor, yoga instructor and advocate for healthy food access in her community. After Jocelyn’s father was diagnosed with cancer for the second time, she created a plant-based superfood smoothie diet that made him dramatically stronger and helped with a quick recovery. She founded Todo Verde in 2015 and left her career in higher education to pursue a new path in foodways related to culture and tradition, and she references traditional recipes passed down for generations within her family. Her business offers a robust catering division and can be experienced at farmers’ markets and at Smorgasburg LA in DTLA.  Jocelyn’s background includes Fine Art, Design and Business degrees, and she has trained at the Matthew Kenney Culinary Institute. Western Foodservice & Hospitality Expo Moves In Person Event to August 2022 – Coffee Fest Still On For 2021

SHELTON, CT – As the restaurant and foodservice industry comes out of the year-long impact of the global pandemic, Clarion Events Food & Beverage Group, along with the California Restaurant Association, has made the decision to cancel the 2021 Western Foodservice & Hospitality Expo and Healthy Food Expo West that was scheduled for this August at the Anaheim Convention Center. This decision was made following extensive conversations with hundreds of exhibitors, operators, sponsors and speakers who recommended moving the next in person live event to August 2022, which will be held at the Los Angeles Convention Center. Event dates will be announced this July.

Pandemic Trends Promote Small Producers of Premium Spirits

MIAMI/PRNewswire/ — Small spirits producers, such as independent bottler The Perfect Fifth, are set to benefit by taking their produce to the key Californian cities of Los Angeles, San Francisco and San Diego, as pandemic-driven trends indicate consumers are reaching for the top shelf when selecting lockdown indulgences.

With the pandemic forcing the closure of bars and restaurants across the globe, consumer behaviour has adjusted accordingly in the last year, and this trend looks set to continue. According to research group IWSR Drinks Market Analysis, “premium-and-above spirits are forecasted to increase their global volume market share to 13% by 2024 as consumers continue to favor quality over quantity.” As locked-down consumers seek out more premium products, this may have an unexpected positive impact on smaller producers, who had previously competed with major brands for space on the bar.

One such example is family-run bottler of premium single malt and single grain Scotch whisky The Perfect Fifth, who are taking advantage of the trend to target discerning drinkers in key international markets, including select US cities. In contrast with the larger producers who dominated liquor sales pre-pandemic, releasing their spirits in batches of thousands of bottles, The Perfect Fifth is an independent bottler of single casks of well-matured Scotch whisky. A single cask of whisky typically holds no more than a few hundred bottles, depending on the size of the cask, making every release from this new company an extremely small batch. The company has so far released four limited edition, single cask expressions of premium whisky (price range $850 – $3,000) from top distilleries across Scotland.

 The 2nd Annual Burger Week, produced by the Orange County Restaurant Association was created to encourage diners all throughout the Southland (Los Angeles, Orange County, Long Beach and Pasadena) to celebrate and support SoCal restaurants while enjoying America’s favorite food – the almighty Burger!

“There’s so much to celebrate this summer with the reopening of restaurants to full capacity, so the timing of our annual Burger Week event couldn’t better,” says Pamela Waitt, President of the OC Restaurant Association. “This is a great time for those who have spent the year away from family and friends to make plans to come together for ‘Burgers and Bourbon’ and support their local culinary community.”

The 2nd Annual Burger Week event will highlight Burgers from local participating restaurants all throughout Los Angeles, Orange County, Long Beach and Pasadena. During this week-long event from Sunday, July 11th through Saturday, July 17th, 2021, diners will be able to explore a variety of Burgers, ranging from classic to creative, featuring various proteins including beef, chicken, turkey, mushroom, and plant-based options, on menus priced at $10, $15, $20 and $25. Many restaurants will also feature Cocktails made with Old Forester Bourbon, Ford’s Gin, Herradura Tequila, and Chambord. The restaurants participating in Burger Week, their Menus, and their featured Cocktails will all be highlighted at BurgerWeek.com.

Costa Palmas Announces Collaboration with Chef Nancy Silverton

The acclaimed chef, known for multiple Los Angeles eateries such as Michelin-starred Osteria Mozza, Pizzeria Mozza and chi SPACCA plans to inject a distinctly Baja spirit into the refined yet relaxed atmosphere of the Los Angeles favorites, as she becomes the anchor in the first phase of the Costa Palmas Marina Village.

“After many years of anticipation, we are thrilled to announce this collaboration with Nancy and her team at Mozza at the center of the Marina Village at Costa Palmas,” says Jason Grosfeld, Chairman and CEO of Irongate (Costa Palmas developer). “The casual and vibrant Marina Village plaza will come to life under Nancy’s direction set around a handmade pizza oven with the active Marina only steps away. Mozza at Costa Palmas will be a place where both members and guests socialize from day to night, and it will very quickly become the place to be at Costa Palmas.”

Set to open early this fall, Mozza will be centrally located in the courtyard of the Marina Village, located at the edge of the international Costa Palmas Marina. The multi-dimensional eatery will be the perfect blend of Osteria Mozza, Pizza Mozza and chi SPACCA, all with an East Cape flare, that features the incredible seafood, produce and provisions of the area. As each day evolves, the menu will change and the crowd may change, but the energy will always be there around the handmade wood-fired pizza oven with the world-class marina in view.

“I’m excited to be partnering with Costa Palmas for the debut of my first Baja outpost. Mozza will soon open, as the classic 1939 song goes, ‘South of the border, down Mexico way,’ ” says Nancy Silverton. “The vibrant flavors of Mozza’s cuisine combined with the alluring vibe of Baja will be a match made in culinary  heaven. I don’t want to give away the entire menu just yet, but I’ll tease just this … imagine the Mozza wood-fired oven and grill sizzling with the glorious bounty of the Sea of Cortez right outside your window. We can’t wait for our guests to experience what we have in store.”

With the yachts, sailboats and fishers forming its backdrop, Mozza at Costa Palmas will seamlessly blend the indoors with the outdoors to complement the natural East Cape setting.  Made up of a variety of interconnected spaces, Mozza’s design will feel like it has evolved over time. Bright, colorful furniture pieces that evoke the fragmented spirit of Postmodernism will be juxtaposed against a worn and weathered landscape that hints at the elegance of traditional Mexican design.  Mozza’s grab-and-go counter, on the other hand, will be reminiscent of a timeless Italian deli.

The Costa Palmas Marina Village, located at the heart of Costa Palmas international marina, adjacent to Four Seasons Resort and Residences, will be alive from the earliest morning hours as fishermen set out, until the wee hours of the night as the late-night crowd heads in. The Marina Village will be connected with the marina itself as world-class sailing, fishing and cruising yachts up to 250 feet form the backdrop to everyday village life. The concept is designed to be a marketplace that works together as retail spaces, open pavilions, restaurants and cafes open onto a central plaza to create a lively gathering place. Costa Palmas Marina Village will be where the community comes together.

Plans for future Marina Village phases include a vibrant boutique hotel and residences, a nightclub, new retail, as well as the Costa Palmas Yacht Club, the marina outpost for the private members-only club at Costa Palmas. Nancy Silverton is the co-owner of Pizzeria Mozza in Los Angeles and Newport Beach as well as Osteria Mozza, Mozza2Go and chi SPACCA in Los Angeles. Silverton also founded the world-renowned La Brea Bakery as well as Campanile Restaurant, an institution that Angelenos cherished for decades.
