Eve Finds Perfect Taste Balance with this Perfect Pairing: Piave DOP Cheese and Spumante Garda DOC

Well this was a new one: Being offered a selection of Italian sparkling and still wines, the cheeses to pair them with and all coming from the same part of Italy! Not something I get delivered every day so I said yes. Below I’m sharing the invitation, my tasting notes and further information:

Fall is here, and everyone is ready for a new tasty experience: Europe’s Perfect Pairing is here to be your next favorite pairing partner. If you are interested in tasting the perfect pairing of Garda sparkling wine and Piave cheese, I would be happy to send you samples… (of) convenient, delicious, and authentic northern Italian products for your Autumn gatherings.

For the Tasting

Use your next dining occasion to explore some of these styles, laying out a spread of delicious Piave cheeses. Taste the fresh and mild flavors of subtle Mezzano D.O.P. (61/180 days) and rich Piave Stravecchio (aged more than 12 months), the bright and vibrant Garda Spumante DOC will cleanse their palates between bites. Removing Piave cheese from the refrigerator at least 30 minutes before serving, will allow for it to be at the perfect temperature to enjoy. 

Garda Spumante DOC wines are just as delicious as easy to drink as well; simply pop the cork, pour, and enjoy. The elegant, refreshing flavors perfectly complement the richness and intensity of your Piave DOP cheese board, and vibrant, fun-loving bubbles add just the right touch to a casual or festive gathering.

My Notes on the Garda Wines, Cheeses and Pairing

Collezione Riondo Brut NV: Pretty sea glass green glass bottle is very eye-catching, the wine itself is a very pale gold with a slight silvery-green sparkle on the edge. Aromas that wafted up through the tiny bubbles included candied pears, French baguette, apple pie, talcum powder and wet sand from a freshwater beach. In the mouth I got lively green apple, honey, lemon and sugary limeade.

Pjafoc Vino Spumante Extra Dry White: Palest yellow of all in color, with tiny bubbles hanging onto the edge of my glass for a very long time. Aromas reminded me of creamy butter, fresh cut cucumber for crudité, white peach, biscuit and overturned dry earth. For the taste I noted that lemon-lime again, pineapple, freshly cut apple slices and a general sense of coolness. A wine to enjoy outdoors on a hot day. The wine had a creaminess as well as a medium acidity, and a very long length on the palate.

2020 Azienda Agricola Prendina Pinot Grigio: The color was a soft yellow with some sparkle, then I noted bruised apple, dust, stone fruit, dry earth and freshly cut pears on the nose. Tasting the wine I was reminded of fruit cocktail in juice, just peeled orange, tangerine, lime zest and lingering citrus fruits.

2020 Cantina Colli Morenici Chardonnay: Light yellow in color, then on the nose there was some sweet Meyer lemon, unsalted butter, grapefruit and ash followed by bright flavors of yellow apple, lemon-lime soda, a nice round mouthfeel, mild acidity and medium finish. I really liked the freshness on this one.

Mezzano D.O.P. (61/180 days) described as fresh and mild.

With the Collezione Riondo Brut NV: Taking a sip of the Riondo first, then taking a bite of the cheese, it was indeed mild, but then rinsing the wine over the cheese, the cheese grew much sharper, nuttier and creamier for me in the mouth, which made the pairing interesting and elevated the pairing. (Note: I’ve had bubbles and cheese before. I either wasn’t paying attention – which I now will do – or this is specific to these cheeses and these sparkling wines!)

With the Pjafoc Vino Spumante Extra Dry White: Doing just as I did above, rinsing the wine over the cheese, I found the pairing similar, maybe not as sharp but certainly sharper with the wine than alone. And again, the pairing elevated the whole experience.

Piave Stravecchio (aged more than 12 months) described as bright and vibrant

With the Collezione Riondo Brut NV: Even though a younger cheese it had a bit more layers on the palate – nutty, salty, briny – then with the wine I noted salt was really heightened, which was nice with the bubbly wine.

With the Pjafoc Vino Spumante Extra Dry White: The saltiness and nuttiness came out in the cheese with the wine, again, as it did with the Riondo. As an observation, these are both hard cheeses, so when you roll the wine over the cheese it also softens it. Again, making the experience something to linger over.

Meeting with Winemaker Zak Miller, and All Things Domaine Carneros

Love invites to wine and dine with winemakers, and this one was right up there with the best:

Hi Eve, 

A day trip to Napa and a leap of faith led Zak Miller, winemaker at Domaine Carneros, on a journey from field research in forestry science to the vineyards of California, Chile and New Zealand to learn all he could about winemaking. And another leap, joining Domaine Carneros over a decade ago, saw his deep respect and fascination for the Pinot Noir grape blossom into a surprising love affair with chardonnay working alongside Eileen Crane, Founding Winemaker and “America’s Doyenne of Sparkling Wine.” As winemaker at Domaine Carneros, Zak oversees the day to day operations of sparkling winemaking.

Winemaker Zak Miller

The Meeting

Tucked in the back of the swanky Avra Beverly Hills restaurant, Zak Miller sat alone at a table for five waiting for four ladies of the pen, the wine pen, to arrive. Though the restaurant was a bit high-status, along with Miller’s pedigree, Miller was not. Affable, friendly and open from the moment he stood to say hello to the end of our time together, roughly two hours, I came away armed with plenty of info to share from our “bubbly” time together.

I had received a large file of past and current press releases from the winery and I have abbreviated some of that below. Before that I will share what we talked about and my notes on both the still and sparkling wines we sampled. This is what I learned from Miller firsthand, we absorbed more (in more ways than one – lol) during the tasting:

  • This is Miller’s 12th harvest with Domaine Carneros. He had experience winemaking for Saintsbury in Napa, as well as wineries in New Zealand and Chile.
  • The winery is striving to be 100% Estate Vineyards, they currently have 400 acres. They have long relationships with growers in Carneros for some of their fruit.
  • It takes roughly 10 years from harvest to release for each vintage.
  • The “Chateau” in Carneros is a replica of Champagne Taittinger official residence, the Chateau de la Marquetterie. Taittinger founded Domaine Carneros in 1987.
  • They use up to 13 Chardonnay clones in the sparkling wines.

The Tasting

2012 Le Reve Blanc de Blancs

2012 was a big harvest according to Miller. The bottle, the only one with embossing and a different all over shape, will be hard to find except in fine restaurants. A little over $100 a bottle and made with 100% estate grown Chardonnay. I got aromas of crisp yellow delicious apple, Brie cheese, rye toast and a mild salinity. In the mouth I got that same bright apple, pear, pink grapefruit and plenty of citrus. $115 a bottle.

2015 Brut Cuvee

This wine – 51% Chardonnay, 47% Pinot Noir and 2% Pinot Gris – spent 36 months in barrel. Notes of white peach, cream, white pepper and green grass on the nose with fresh fruit cocktail and hard red apple candy on the palate. $36 a bottle.

2016 Estate Pinot Noir

They make about 12 thousand bottles of Pinot Noir per year. This vintage used 15 of their 16 Pinot Noir clones, all estate. Loved the aroma of black cherry, stems and must as well as the flavor of both red and dark cherry, black currant and toasted oak. Well balanced fruit and tannin. After twenty minutes the wine further improved and showed more of that dark fruit I liked. Nicely done for only about $30 a bottle for a Napa Pinot.

Cuvee de la Pompadour

This blend of 59% Pinot Noir and 41% Chardonnay had only been macerated with the skins on for a few days before draining off. Miller wanted the color but not the tannins from the Pinot. He felt that a heavy Pinot influence makes the sparkling “bastardized.” Yellow cling peaches, raspberries, golden raisins and a hint of flint greeted me on the nose, followed by raspberry, red cherry and just a tad of cheddar. $42 a bottle.

From Domaine Carneros (Abbreviated)

Some history: Founded in the Carneros appellation of Northern California by the Champagne Taittinger family, Domaine Carneros is a small grower producer of ultra-premium Carneros Sparkling wines and limited production Pinot Noirs. Thirty years after the winery’s inaugural harvest, Domaine Carneros has become the benchmark for California Sparkling wine, reflecting both the individuality of the Carneros’ terroir and the craftsmanship of its French legacy.

The Chateau: Completed in 1989, the 18th century château-style building was architecturally inspired by the historic Château de la Marquetterie owned by Champagne Taittinger in the Champagne region of France. Situated atop a knoll and overlooking endless rolling vineyards, the elegant property is an iconic Northern California landmark. The château houses the winery’s facilities as well as beautiful salons for visitors and wine club members.

The summer of 2018 marks the completion of the highly-anticipated and beautifully-designed Jardin d’Hiver – a conservatory-style addition to the north terrace of the renowned Domaine Carneros château, which will allow guests to immerse themselves in the beauty of Carneros and surrounding vineyards while being shielded from the weather.

Winemaker Zak Miller: It was his first harvest in Napa Valley at Saintsbury Vineyards that gave him a deep respect and fascination for the ever challenging Pinot Noir grape. Eager to continue learning, he traveled to New Zealand and Chile to hone his craft. Returning to northern California wine country in 2008, Miller joined Domaine Carneros with the goal of continuing to evolve his skill with pinot noir working closely with TJ Evans and his still wine program at the chateau. Or so he thought.

Working alongside Founding Winemaker, Eileen Crane, opened to Miller a new realm of possibility in winemaking – sparkling wines – and he hasn’t looked back since. Through Crane and the Domaine Carneros team, he developed a deep appreciation for the versatility of both pinot noir and chardonnay in sparkling winemaking and the great skill required to craft beautifully balanced, elegant yet complex wines. And through his work as a sparkling winemaker, he grew to love a variety he admittedly didn’t gravitate toward originally – chardonnay – which provides the base for what he feels is its finest expression (and a personal favorite), Blanc de Blancs.

Eve Bushman has a Level Two Intermediate Certification from the Wine and Spirits Education Trust (WSET), a “certification in first globally-recognized course” as an American Wine Specialist ® from the North American Sommelier Association (NASA), Level 1 Sake Award from WSET, was the subject of a 60-minute Wine Immersion video (over 16k views), authored “Wine Etiquette for Everyone” and has served as a judge for the Long Beach Grand Cru and the Global Wine Awards. Brazilian Sparkling wines – the taste of celebrations

Shake up your habits and pop a Brazilian sparkling wine for your next festivities. Characterized by an exceptional acidity and freshness, they are ultimate crowd-pleasures. Many of the producers follow the méthode traditionnelle – the same as Champagne – Brazilian sparkling wines are mainly produced from Chardonnay, Italic Riesling, Pinot Noir and Muscat. Aromatic and vivacious, they can be enjoyed on their own as an aperitif, or with all kinds of every day food such as sushi and light salads.

Brazilian Red wines – the flavor of passion

Brazilian reds will delight every red wine lover: from fruity to earthier reds, the region is home to a palette of vibrant reds pressed mostly from Merlot and Cabernet Sauvignon, which produce elegant and structured wines. With lower alcohol contents than similar New World wines (around 11-12.5%), they can be sipped during the day, without fears of headiness. The wines’ aromatic flavors combined with mild tannins make them a perfect addition to the dinner table: fresh and young, they will not overwhelm your meal’s flavors. Sip them with a BBQ-grilled meat to feel like a proper Brazilian enjoying a churrasco, the country’s iconic ember-grilled steak.

A look inside Brazil

There are six wine regions in Brazil, covering an almost 2,500-mile distance along the country’s eastern border. 90% of the wineries are in Rio Grande do Sul, the state located in the southernmost part of Brazil,  bordering Uruguay. The state is also on the same latitude as Argentina and South Africa:

  • Serra Gaúcha – the leading region in terms of production, representing 85% of all wines produced in Brazil, it is recognized for its fruity reds and fine sparkling wines. The basaltic soil, humid climate and mild nights produce wines with a distinctive personality.
  • Campos de Cima da Serra – known for its aromatic whites, and elegant and sophisticated reds, the region enjoys moderate temperatures and consistent winds, which guarantee healthy vines.
  • Serra do Sudeste – celebrated for its low-yield vines and delicate wines with great minerality, this mountainous region is recognized as one of the most promising wine areas in Brazil.
  • Campanha – located in the south, bordering Uruguay and Argentina, the region is devoted to vinifera grapes, including Cabernet Sauvignon and Syrah, but also Tannat and Tempranillo, and is recognized for its flavorful reds.
  • Planalto Catarinense – known for its high-altitude vineyards, Planalto Catarinense is celebrated for its fresh still and sparkling whites. The region is also developing an interesting  organic and biodynamic wine production.
  • Vale Do São Francisco – the most northern vineyard in Brazil, its grapes have higher sugar levels, creating bold and fruity wines. The region is also known for its full-bodied reds, high-quality Moscato sparkling wines and exceptional yields with two harvests a year.
