Chef 101 Humpday Recipe: Fast & Easy Chicken Parmigiana

When my daughter was young she and her friend “Mantha” liked this dish.  What that really meant is one enjoyed the pasta while the other ate the chicken.  Reminded me of my sister; I ate the yolks and she ate the whites of my mom’s Sunny Side Up Eggs.  

This recipe, from God knows where still suffices.

1 package of Chicken Tenders
1 – 2 jars of any spaghetti sauce you like
1/2 to 1 full box spaghetti
Italian bread crumbs
two eggs
shredded mozzarella cheese

preheat oven to 350 degrees.

dredge chicken in beat eggs, then bread crumbs, place in baking pan.
bake 20 minutes.
heat sauce and get water ready for cooking the pasta.

After 20 minutes of baking top chicken with lots of sauce and mozzarella, reserve remaining sauce in pan for pasta.
Bake an additional 15 minutes for topping to melt.
make pasta according to box.

Serve with salad and your fave red wine for Italian food, Chianti Classico comes to mind.
