Nashville, TN— Pennington Distilling Company earns 17 medals from the American Distilling Institute and the American Craft Spirits Association annual competitions.  

Davidson Reserve® is a big winner at the coveted 2021 ADI Judging of Craft Spirits Award earning Best of Class, Best of Category, and Gold.   The Davidson Reserve® Four Grain Tennessee Straight Bourbon Whiskey, made with corn, wheat, barley and rye, topped the judging in the Distilled(1) & Certified Craft Distilled Spirits™ Whiskey division (specifically “grain to glass” distilleries).

American Cheese Society Announces Dates for 2022 Judging and Competition

DENVER (PRWEB) – The American Cheese Society Judging and Competition, the largest event of its kind for American-made cheeses, will take place May 19-20, 2022, at the TCF Bank Stadium on the University of Minnesota, Minneapolis campus. Canceled in 2020 and 2021 due to the pandemic, the Judging and Competition (J&C) will be held separately from the Conference in 2022 for the first time. Following this year’s virtual 38th ACS Annual Conference (July 28-30, 2021), entries for the J&C will open in October 2021, with winners announced at the 39th ACS Annual Conference, which will be held in Portland, Oregon from July 20-23, 2022.

The ACS Competition shines the spotlight on American cheesemakers by showcasing their talents and work as leaders within the industry, both for their excellent cheesemaking and commitment to food safety. Growing from just 89 entries 37 years ago, the ACS J&C welcomed cheeses and cultured dairy products from 257 companies in 2019, when it was last held in Richmond, Virginia. Competing entries represented 35 U.S. states, 4 Canadian provinces, Mexico, and Brazil. The ACS awarded a total of 433 awards including 139 gold medals, 143 silver medals and 151 bronze medals. The 2022 event is expected to receive 1500 entries in 120 categories.

“Given the extraordinary year we’ve all had, we are very excited to welcome entries for the Judging and Competition this October,” said Lynn Giacomini Stray, board vice president of ACS. “This is a significant event which celebrates the individual efforts of talented cheesemakers who continue to collectively advance the quality and character of American cheeses, while offering our members the opportunity for valuable feedback from expert judges,” she added.

Cheeses entered in the competition will be received May 17-18, 2022, with judging from May 19-20. More information will be shared at the virtual 38th ACS Conference, which will gather artisan cheesemakers, industry professionals, purchasers, and influencers from the United States, Canada, and Europe. On the nose of Harris County, you’ll find notes of brown sugar, cherry, fruit-wood smoke, toasted pecan, and tobacco. Vara Winery and Distillery High Desert Gin Receives High Marks East to West

ALBUQUERQUE, N.M. (PRWEB) – Vara Winery & Distillery’s High Desert Gin received Double Gold at the 2021 New York International Spirits Competition, along with five other medals including “New Mexico Distillery of the Year.” The New York International Spirits Competition is an annual judging of spirits that occurs each spring in New York City. The competition is unusual in that it is one of the few competitions that relies entirely on judges drawn exclusively from the beverage trade.

“Our first Double Gold medal in the Las Vegas Proof awards in December 2020 was humbling, and now this second Double Gold medal from the New York International Spirits Competition serves to validate our inspiration and execution of Vara High Desert Gin,” said Doug Diefenthaler, co-owner at Vara Winery & Distillery. “We seem to have found agreement with our idea of a lighter and more aromatic style of Gin and our distilling team has successfully interpreted our inspirations and has masterfully given life to this intriguingly delicious spirit.”

Vara stayed true to its mission of producing an international family of Spanish and American wines and spirits. Vara co-founders Doug Diefenthaler and Xavier Zamarripa were inspired to create a gin after noticing Spaniards’ affection for gin during their frequent trips there. The Spanish began to make their own gin using botanicals and blossoms found in the Mediterranean. Diefenthaler and Zamarripa wanted to emulate that style of gin. Albuquerque does not have the same botanicals found in the Mediterranean but what it does have is high-desert mountainous aromatics. Vara’s small-batch gin features 13 botanicals and is distilled from New Mexico grapes.

“The only other major unique thing about this is it’s not from a neutral grain spirit; it’s from a neutral grape spirit,” Diefenthaler said. “We start with a fruit-based distillation to make this, as opposed to a grain-based distillation. The aromatics that are in this from our region like to attach to that grape spirit. This is just unrivaled. It’s got nice weight, a nice texture and finish.”

The idea for Proclamation Blended Irish Whiskey was originally conceived to honor the history of the people behind the birth of the 1916 Proclamation. Historian, author, and publisher Mícheál Ó Doibhilín explains, “We wanted to celebrate Ireland’s independent spirit through a quality Irish whiskey, one that also tells the story of some of the unsung heroes of this time. Proclamation Blended Irish Whiskey pays tribute to the three printers of the Proclamation, William O’Brien, Michael Molloy and Christopher Joseph Brady and acknowledges the important role they played during a hugely significant time in Irish history.”

The Proclamation boasts a design that reflects the physical attributes of the original document. The printers had insufficient type to print it all at once it had to be printed in two parts. The label includes blind embossing, while fonts were specially redrawn to emulate those of the Proclamation, such as the spurious ‘e’ that features in the original document.

Paul Caris, ITUT’s Master Blender and also responsible for Grace O´Malley, hand selects casks with distinctive character and complexity. Caris, a former winemaker and Bordeaux-Native, brings an impeccable palate and years of experience to Proclamation.

TASTING NOTES
NOSE: First to be revealed is ripe Williams pear, followed by an abundance of apricot and crème brulée notes. Slowly developing through to rich custard, freshly brewed cappuccino and ending with woody notes.
PALATE: Front loaded notes of toasted brioche, freshly baked pastry and overtones of macerated yellow fruits. Fusions of tannins on the mid-palate with a robust yet rounded finish.
FINISH: Overwhelmingly creamy with a mellow finish and hints of toasted cereal.

While difficult to source and dangerous to use, the wood delivers intense flavors, with heightened interaction between spirit and oak, creating unparalleled complexity in the whiskey.

While previous editions of The Boss Hog were finished in one outstanding cask, WhistlePig’s young and imaginative whiskey team sensed there was another step in the journey to fully unlock the potential of The Boss Hog VII. For its final finish, South American Teakwood casks are sustainably sourced from Brazil.
