Pacific International Liquor Announces Arrival of Ginjo Style KOBE SAKE

LOS ANGELES, April 18, 2022 /PRNewswire/ — A revolutionary new sake, “KOBE,” has been born. With premium Ginjo aroma, it can be enjoyed casually as cold sake. Its alcohol content is 11.5%, as light as wine. If you believe sake tastes harsh, KOBE SAKE is surprisingly smooth and crisp. KOBE SAKE can also be enjoyed in a variety of cocktails. This is because the brewer’s skill has resulted in a fine balance of distinctiveness and taste.

The city of Kobe is known as the oldest sake-producing area (for 700 years), and it produces more than 25% of all the sake produced in the entire country. Sake made in Kobe is believed to be the best because of its excellent local weather, the quality of its rice and water, and the skill of its brewers.

After nearly 300 years of national isolation, Japan opened the Port of Kobe on January 1, 1868, allowing Kobe to develop into an international port city. Kobe attracts many Americans and Europeans, many of whom establish their residences there. Through their influence, Western food, clothes, and entertainment found their way into Japanese culture, making Kobe one of the first cities in Japan to be introduced to foreign culture.

The Meiji and Taisho periods’ cityscape and culture still remain in present day Kobe. In fact, KOBE SAKE’s label design depicts the integrated image.

Kobe is also known as the birthplace of Japanese jazz and cinema. Other products developed in Kobe include clothes, bread, confectionery, and beef, which remain signature goods of Kobe to this day.

Today, nearly 50,000 people from more than 100 countries live in Kobe. As sake has become more popular worldwide, one-third of visitors to the sake breweries in Kobe are foreigners. As Kobe cherishes both its traditional and foreign cultures, KOBE SAKE will be another cultural contribution by the city of Kobe, Japan.

How Was “Masters of Taste” LA 2022?

The fifth annual Masters of Taste event, held on the field of the Rose Bowl, was last Sunday and we were thrilled to attend.

This is from my social media post the next day:

Oh WHAT FUN we had at Masters of Taste yesterday! This is the event where 100% of the profits go to Union Station Homeless Services! And it was on my birthday this year!

Traveling by limo courtesy my publishers Moe and Linda Hafizi, was an additional treat! Some of the liquor we sampled included wine from Golden Star Vineyards and Ascension Cellars, Lucky Dog (juice box) Sake, Knox and Dobson ready-to-drink cocktails (full article just on them runs 4/22), Smoke Lab Aniseed vodka distilled from Basmati rice is India’s “first premium vodka”, Dulce Vida Tequila, Ventura Spirits for their Amaro Angelino, Roku Gin, Suntory Whisky, Pomp and Whimsy Gin Liqueur, American Born bourbon whiskey, Woodford Reserve, the 1886 Bar at the Raymond…and then there was the FOOD!

The Details

It’s always such a rush walking down to the Rose Bowl field from the stadium seats! I always make an immediate right turn and hit as many tables as possible before resting after that first loop around. This is who made an impact this time:

Georgia’s Restaurant made Gretchen’s Jambalaya – the first booth I had food at and it was delicious, flavorful and not too spicy!

The long but fast moving line for delectable Dim Sum from Lunasia Dim Sum House was worth it.

Another line was to sample the food and meet the host chef, Vanda Asapahu, at the Ayari Thai table!

Golden Star Vineyards and Ascension Cellars, two wineries that I’ve enjoyed for years, so it’s always nice to see them on the playing field.

The detail on the animal-faced macarons, an item you can request for special occasions, from Etoile Filante Patisserie was another cool find.

Maneki Wanko Lucky Dog (juice box) Sake: I saw people sipping from juice boxes and was surprised to find that the cute little turquoise boxes with a playful dog design was holding Sake!

Fantasy Frostings makes a killer cake, moist and tasty. I looked at their Facebook and their wedding cakes are lovely!

Knox and Dobson ready-to-drink cocktails made an impact on me again – see the full article just on them April 22 on Eve Wine 101.

Little Llama Peruvian Tacos made a Shrimp Ceviche Tostada that was full of flavor.

Dulce Vida Tequila has THE best flavored tequila in my opinion, this time I enjoyed their grapefruit, on its own as it doesn’t need a thing. And it’s made with real fruit.

Enjoyed discovering Ventura Spirits Amaro Angelino, also their Limoncello. Nice local place to support.

Who doesn’t love short ribs? Chef Gil Saulnier from Mi Piace made a Prime Slow Braised Short Rib over Saffron Risotto and a Mini Crème Brûlée cheesecake too = so very decadent!

Pomp and Whimsy Gin Liqueur was my first big find at Masters of Taste years ago. If you like gin try this liqueur, it softens all that juniper with other botanicals.

I got more comfort food from Granville as they served up their Uptown Mac n’ Cheese!

American Born bourbon whiskey was tasty, again on its own, no mixer needed!

World Empanadas baked several varieties, I wanted to try them all but settled on sharing a Nutella-filled one with my husband. Family run, locally owned and Vegan too.

Woodford Reserve had a huge area just at the entrance, and made a refreshing slush cocktail with their bourbon, lemonade and cranberry juice. I wanted a second one, but that would not do with all that we had to try!

The 1886 Bar at the Raymond always make the best cocktails, on the field and in their Pasadena restaurant!

Bertha Mae’s brownies, in all kinds of flavors, were yummy.

There was quite a buzz going for the Jicama Shrimp Tacos from Mercado! They were sooooo good!

Smoke Lab Aniseed vodka distilled from Basmati rice is India’s “first premium vodka”, and not at all like the sweet or thick Sambuca anise liqueur.

Mignon Chocolate had their fountain flowing and I had a nice freshly dipped strawberry from them!

Enjoyed the Suntory whisky booth for the whisky and the Roku gin.

Seeing two of the Drago brothers and trying their pasta with pork sausage and Gorgonzola from Drago Centre was a big thrill for me.

Los Angeles, CA – Come celebrate and be part of the 5th Anniversary Masters of Taste, L.A.’s premier outdoor, luxury food and beverage festival that will take place on Sunday, April 3rd, 2022, from 3:00 pm to 7:00 pm on the field of the iconic Pasadena Rose Bowl!

Masters of Taste is introducing Chef Vanda Asapahu as it’s first-ever female Host Chef of Masters of Taste 2022, which also happens to mark the 5th Anniversary of this celebrated event. Culinary Master and 2022 Host Chef Vanda Asapahu is the chef and owner of Ayara Thai and she has participated in Masters of Taste since the event’s inception in April 2016. Asapahu went to college at UCLA and to graduate school at Yale, then she spent four years living, traveling, and working her way through Thailand before returning home to Los Angeles. During Asapahu’s stay in her native country, she took extensive notes, which included absorbing the Bangkok Street Food scene and reviving old family recipes. After cooking with relatives and eating her way through the streets and countryside, Asapahu brought back treasured old recipes and new flavors to share at Ayara Thai. While her mother, Anna Asapahu, still helms the family kitchen, Asapahu is the vanguard, taking up the torch of her family’s culinary tradition at Ayara Thai, and under her leadership in May of 2019 Ayara Thai was named one of Michelin Guide California’s 2019 Bib Gourmands.

Masters of Taste 2022 will bring over 3,000 food and beverage enthusiasts together for one afternoon to celebrate this exhilarating festival, which will include the finest fare from over 100 Culinary Masters and restaurants, delectable sweets prepared by L.A.’s top Sweet Masters, top Beverage Masters who will be featuring signature handcrafted cocktail tastings from over 25 spirit brands and bars, along with select wineries, local craft breweries, cold-pressed juices, cold brew coffee, live entertainment and much, much more. 

This year, Masters of Taste falls in April, during which Thai New Year, Songkran, is also celebrated. Chef Vanda has invited 3 other L.A. Thai restaurants, to participate in the Songkran Thai SELECT Pavilion, a celebration spanning the Rose Bowl’s end zone. The transformation will reflect a traditional Thai sundry general store and Songkran festival. As a culinary challenge, each Thai restaurant will prepare a dish, dessert, and/or cocktail using a common paste, sahm kler (which translates to “3 buddies”), and comprises white peppercorn, garlic, and cilantro root. This aromatic mixture is used in a variety of Thai dishes and is quite possibly the reason why Thai food is so special. Like sahm kler, the 3 buddies paste, the 3 other restaurants comprising the Songkran Thai SELECT Pavilion are 3 of Chef Vanda’s personal buddies!        

100% of the proceeds from Masters of Taste 2022 will directly benefit Union Station Homeless Services, a 501(c)(3) nonprofit organization that is committed to providing permanent solutions to end homelessness and rebuild lives. Headquartered in Pasadena, CA, Union Station has served the community for nearly 50 years and today it is the San Gabriel Valley’s largest social service agency assisting homeless and very low-income adults and families. In addition to its recent expansion into El Sereno and Eagle Rock, Union Station Homeless Services is the lead County agency for Service Planning Area 3 (SPA 3), coordinating homeless services in 36 communities, with a combined population of over 1.5 million across the San Gabriel Valley. Union Station Homeless Services’ mission is guided by the belief that everyone deserves a life of dignity and a place to call home. In the last four years Masters of Taste has raised over $2 Million in support of Union Station Homeless Services life-saving programs.

This year Masters of Taste 2022 will partner with Careers Through Culinary Arts Program, Los Angeles (C-CAP LA), a national 501(c)(3) non-profit founded by culinary educator Richard Grausman in 1990 and Co-Chaired by Chef Marcus Samuelsson. Careers through Culinary Arts Program (C-CAP) provides culinary, job, and life skills to over 20,000 middle-and-high school students in seven regions across the United States: New York City, Newark, Philadelphia and Camden, Chicago, Los Angeles, Washington D.C., Maryland, Northern Virginia, and Arizona, including 7 Navajo Reservation schools and was named a National Apprenticeship Program by the U.S. Department of Labor in 2021. Due to the restaurant industry labor shortage, the Los Angeles Region, C-CAP LA will be partnering with Masters of Taste by bringing high school student volunteers to assist this year’s Masters of Taste 2022 Culinary and Sweet Masters throughout the event to gain real-time event training while helping support these incredible chefs and restaurants that are participating in this year’s event.

Wine Paris and Vinexpo Paris, where the global industry meets

Wine Paris and Vinexpo Paris is returning to Paris Expo Porte de Versailles from 14 to 16 February 2022 for its third edition, marking the resumption of in-person events for the wine and spirits industry. By offering a comprehensive and inspiring range of products with a powerful international resonance, the Vinexposium group’s flagship event is reiterating its commitment to becoming THE global benchmark and a key date for trade members.

Wine Paris and Vinexpo Paris will be the first major international event of 2022 and it marks the resumption of full-scale tastings. Highly awaited by the global wine and spirits industry for the variety of products on show and its business meetings, the event is now focusing on promoting attendance by key buyers, including those from outside the EU who are showing a strong interest in the exhibition.

Over three days, more than 2,800 exhibitors will convene in Paris to showcase their latest vintage, their flagship products and rare bottlings, all of them delicious pours to be shared with connoisseurs from around the globe. Vintage Eve Circa 9/2018 – Mutual Trading Show 2018: An Array of Japanese Food and Drink Reviewed

This would be the second year of discovery for us: attending the Mutual Trading Japanese Food and Restaurant Expo. While the wide array of Japanese food and beverages takes center stage, I really like to cover the show to learn something new, and I do every time.

If you just want to see the food and drink, my photos are here. Of special note for me:

Japan’s #1 Nama Sake in a CAN: Funaguchi Kikusui Ichibanshibori. It was served to us three ways: fresh and cold from the can, sweetened with citrus juices and with slices of cucumber. Each was quite remarkable.

Masahiro Shuzo, a company that has “been in business for more than 130 years”, Awamori – a distilled 30% ABV (60 proof) that is produced in Okinawa.

The Umepon liqueur was a favorite last year for us so I was happy to see them back and also try a cocktail version. It is orange and plum liqueurs blended with rice shochu.

I had Dassai sake in my WSET level one sake course, also noted that one of the numbered versions is served at our local Gyu-Kaku Japanese BBQ. (The bottles are numbered and that number correlates with how much the rice grain is milled to. The lower the number the finer the grain, and hence, the finer the sake.) At the show I expected to see the usual 50, but they also had a 23 to sample, which was really delicious.

The brand “Dragon God” sold only to restaurants, had a couple of different sake that I enjoyed. Look for these when you dine out.

Of the displays I was duly impressed by the many award winning beverages, glass and pottery sake serving sets and the array of sashimi, sushi, tofu, sesame seed – from oils to desserts – and noodles. The longest line is always for small servings of ramen. If I were to work with a Japanese restaurant I’d put my money on ramen.

Attendees were extremely lucky to have a class offered on food pairing with Antony Moss MW and Chef Nobuo at Teeter House.

Moss is the Director of Strategic Planning for WSET (Wine and Spirits Education Trust) and though he has earned his MW his focus for the last five years has turned more to sake. He said sake pairs easily with food as there are no tannins or acid.

Chef Nobuo said that drinking sake with a meal will “clean whatever stays in the mouth” and the “combination of contrasting things (makes pairings) delightful.”

During the seminar we were given two samples to try: Miyazaki beef and Bluefin tuna. Both were served with a specifically selected cold sake that would enhance the flavor of the dish, and by a show of nods when Moss asked, both pairings succeeded. The selection of a sweeter sake with the beef was truly inspired. Of course both the fish and the beef had been marinated as well as served with a topping, which was all taken into account in the selection of the sake. Long story short, this was just really the beginning of what we would learn about pairing sake with dishes other than sushi.

Moss said that he often enjoys a sparkling sake with English Fish and Chips or an Italian calamari dish. Junmai or Honjozo sake paired better with Bolognese than a Chianti in his educated experience. Moss further explained that during the first half of the 20th century menus had a “wide mix of styles” in European cuisine, especially French cuisine. There were sauternes on the menu that were paired with steaks. This wholly positive experience he believes “dispels the myth of (having to have) red wine with steak.” What may sound “radical” to us is “deeply rooted with both Japanese and European history.”

A couple of questions by the audience that I found interesting:

Did restaurants have to provide a different type of glass if we were going to replace wine with sake at the dinner table? Moss contemplated that Riedel does have glasses for every need…however he said the traditional Japanese cup or glass is fine. And if a wine glass was preferred then a small white wine glass would suffice perfectly. He also said not to feel intimidated by this, and to use your personal preferences as a guide.

A second questions was on temperature. As we had been discussing cold sake pairings would warm sake work as well? While Moss enjoyed sake between 40 degrees and room temperature, he said warming up the sake “can be very satisfying.”

Dallas, Texas —James Tidwell MS, owner and producer of TEXSOM International Wine Awards, announces entries are open for judging and awards consideration for the 2021 competition to be held April 25-27, 2021 at the Four Seasons Resort and Club Dallas at Las Colinas. A new addition to this year’s judging is the inclusion of spirits (whiskey, gin, vodka, etc.), pre-mixed cocktails, cocktail components, and bitters. The competition has an improved, more tailored entry experience for sake, cider, and mead producers, all beverages judged in previous years, allowing for greater differentiation.

“Folks in Idaho last year were thrilled with the response to their entries at TEXSOM,” says Eric Degerman, president and CEO of Great Northwest Wine. “A number of Idaho producers have stopped submitting new releases to some publications because they question if Idaho wines are evaluated under blind conditions, which is another reason why the showing of Idaho wines at your competition — featuring arguably the most prestigious panel of judges in the U.S. — is important to that emerging wine region.”

Alexandra Cherniavsky, an Advanced Sommelier and Wine Consultant from Philadelphia, Pennsylvania shares, “TEXSOM IWA gave me a larger world perspective and insight into who the important producers were in individual parts of the world and what grapes were important there.” Cherniavsky, a previous multi-year participant in the TEXSOM Sommelier Retreat and a 2020 TEXSOM IWA volunteer continues, “It gave me wines to recommend at every price point and a working knowledge of Texas wines, something I never would have been exposed to otherwise.”

Neft Vodka: a Vodka to Sip!

I’ve tasted a lot of vodka over the years. Flavorless and colorless are two descriptors assigned to it most often in spirit education courses. But, when you taste vodka over a period of time you can detect certain nuances, things that make them differ, and in the case with Neft, stand above the pack.

For most tasters, beginners to experts, it’s the alcohol burn that sets them apart. Inexpensive vodka can be quite harsh – lots of burn – while other more sought after brands – have little to no burn, but also have some interesting qualities. Neft is one of those.

When my sample arrived I was immediately surprised at the tin container it came in. Did some reading and learned that the tin cylinder leaves less of a carbon imprint, it’s not breakable and will stay cold longer. The sample also came with instructions for tasting. As I’ve said I’ve tasted plenty, but in the essence of a true vodka lover I followed their suggestions: how long to chill it, the type of glass to use, to try alone and not in a cocktail, how to nose the vodka, etc. This is the result:

As instructed we didn’t freeze, only chilled in freezer for an hour before sampling. Tasted neat and in a small glass:

Observation in glass: clear and clean, like a finely filtered water. No minerals or impurities.

Aroma from two inches away and swirling: reminded me of a a very fine sake, like a daiginjo where the sake rice has been milled down to 50%. With a gentle sweetness, as well as a creaminess, and some slightly buttery and even nutty notes.

Flavor: Smooth, burn on the mid palate only and not immediate. Still reminding me of a fine cold sake but of course, this is definitely a smooth and creamy vodka. The mouthfeel makes me want to sip alone, not masked by ingredients in a cocktail or even with ice. If I hold on the palate, the way whisky master blender Richard Patterson instructs for tasting single malt scotch, the mouthfeel only becomes rounder and more balanced.

Conclusion: This is not your mother’s vodka. This is a whole new generation, and a new level, of sippingvodka. 99 Eve points.

The Tio Pepe Challenge Takes Place in U.S.

CHICAGO (PRWEB) – Not even a pandemic can prevent the Tío Pepe Challenge from happening in the U.S. González Byass teamed up with Chilled Magazine to hold the Tío Pepe Challenge virtually on Facebook Live on August 17, 2020, resulting in a tie between Ricardo Acevedo from Le Sirenuse Miami in Miami, FL and Damian Langarica from A.bar in Philadelphia, PA as the winners of the 2020 U.S. Tío Pepe Challenge.

The Tío Pepe Challenge was created by leading Sherry producer, González Byass, to inspire mixologists from around the world to create original, great tasting cocktails using Sherry as their principle ingredient. Ricardo and Damian competed against four other bartenders from around the U.S. virtually. The six competitors were judged by their use of the venencia (the tool traditionally used to extract Sherry from the barrel) and by their cocktail mixed with a González Byass Sherry.

The judges received the cocktail recipes and ingredients prior to the Facebook Live competition and prepared the drinks in the same order as the competitors. They reviewed each bartender based on the creativity of using Sherry in his or her cocktail and the skill displayed with the venencia. The judges included: Alvaro Plata, Tío Pepe Brand Ambassador; Jeff Greif from Chilled Magazine; Daniele Dalla Pola from Esotico in Miami; and Valentino Longo from La Sirenuse in Miami Beach, FL.

In the past, the winner of the U.S. Final would go on to compete at the International Final in Jerez, Spain. This year, since the event will not take place, all participants receive a cash prize, with the tied winners sharing the first and second prize, each receiving $1,500.

1 ¾ oz Tío Pepe
¾ oz Coconut vermouth
¾ oz Lemongrass sake
Saline
3 drops Ginger olive oil
Stir all ingredients except ginger olive oil. Strain into Nick and Nora the finish with 3 drops of ginger olive oil.

¾ oz spiced demerara syrup
½ oz preserved lemon juice
1 egg white

Combine and dry shake all the ingredients except the PX Sherry, then add ice and shake again. Double strain into a chilled coupe, and slowly pour the PX through a barspoon to the bottom of the glass to create the layering effect. Garnish with an orange peel and grated cinnamon.

Vintage Eve Circa Nov 2017: Tasting the Double Gold San Francisco Competitions at République

At the end of October I had a chance to taste a selection of Double Gold winners from the 2016 and 2017 San Francisco International Wine Competition and the 2016 and 2017 San Francisco World Spirits Competition.

Granted, I have judged a couple of times, as I’m sure some of the students in Blue’s class have done, but it’s good to be reminded just how serious the judging is.

  • When the competition began they had a scant 300 entries, now they are up to 2,400.
  • There are 60 judges in the process, and they are made up of experts (reviewers, writers, restauranteurs, somms, etc.) allowing each group to have a good representation in which to judge merits.

  • There are 28 countries from the current competitions.
  • While they usually receive more wine to review, there are still 80 – 100 spirits.
  • Judging is done blind, the bottles are not seen, and they don’t know the price or the area they came from – only the varietal is known.
  • As price is sometime a factor to the general public, and more expensive is perceived as more valuable, the price points of the wine and spirits are not revealed.
  • After the Double Gold winners are awarded, then all of the judges get to taste all of the Double Golds to determine the sweepstake’s winner.

Eve Bushman has a Level Two Intermediate Certification from the Wine and Spirits Education Trust (WSET), a “certification in first globally-recognized course” as an American Wine Specialist ® from the North American Sommelier Association (NASA), Level 1 Sake Award from WSET, was the subject of a 60-minute Wine Immersion video, authored “Wine Etiquette for Everyone” and has served as a judge for the Long Beach Grand Cru.
