WoodCraft Bourbon Blender is Taking Craft Bourbon Back to Its Roots

Cincinnati, Ohio – The innovators at WoodCraft Bourbon Blender have created a system that brings the custom bourbon of the 1800s to all bourbon lovers today.  This has translated into a new way of consuming bourbon by giving patrons what they want; their own personal single barrel bourbon by the glass or bottle.

Initial consumer and industry reaction has been so positive that the team is now franchising WoodCraft Bourbon Blender.  The first WoodCraft Bourbon Blender franchise, Barrels & Billets, opened its doors in Louisville, on the famous Whiskey Row, on February 23rd.

This exciting new bourbon experience where guests can blend, create and bottle their very own bourbon will complement Louisville’s thriving bourbon tourism industry by offering guests a fun and unique way to participate in the blending of their own personal bourbon.  Guests will blend with six award-winning WoodCraft bourbons which include a 200 Year Oak, European Oak, American Oak, Cherry Wood, Maple Wood, and Smoked Oak. During the experience, guests will learn the art of bourbon blending before the blending process begins. Once the blending experience is complete, guests can have their recipe bottled onsite.

The franchisee is the  Hillerich family – famous for their Louisville Slugger baseball bats.  They have a link to whiskey as the original family immigrant, J. Frederick, was a barrel maker.  They also have showcased years of expertise with consumer experiences such as their famous Louisville Slugger Museum & Factory.

“Some may be wondering why a sports and attraction company is getting into the bourbon business, but Barrels & Billets is actually a continuation of H&B’s long history of creating uniquely Louisville experiences for our fans and guests,” said John Hillerich, President & CEO of Hillerich & Bradsby Co.

Co-founders Doug Hall and Joe Girgash created the WoodCraft finishing system to offer everyone the ability to have their own custom bourbon.  Despite the chaos of Covid, they’ve worked through massive regulatory and production issues to make it possible for everyone to have their own bourbon again – one drink or one bottle at a time for a reasonable price. As Doug says, “Owning your own custom bourbon distillery is a ton of fun.  That said, you need to have patience as the process for regulatory approval is painful.”

It took three long years to turn this dream into a reality. Doug leveraged the invention skills from his other company, The Eureka! Ranch, and worked through the many challenges including those outlined below.

  • Working through state and federal rules and regulations
  • Teaching customers how to create their own custom bourbon recipes
  • Creating a way for the custom bourbon to have reliability so that it can be repurchased at later dates
  • Discovering a cost-effective system for creating individual bottles for the custom bourbon

The process is simple. Consumers can create their custom bourbon three ways:

  1. Enjoy a one hour blending experience, while learning about the art and science of master bourbon blending
  2. Work with a 2 minute Artificial Intelligence Bourbon Wizard
  3. Buy a custom Bourbon Blending Kit to do at home guided by an internet accessible video.

However, it doesn’t end here. Doug and Joe are constantly working on next steps.

They will continue to expand the franchising of the free-standing WoodCraft Bourbon Blending Machines in stores, as well as fractional franchising in over 20,000 distilleries, breweries, and wineries.  With a low investment, and small space requirement – franchisees can soon offer custom bourbon experiences and bourbon bottles to their clients.

They are also developing a way for a version of the blending machine to be available in bars and restaurants.  Additionally, they are building on their initial success of Dexter Bourbon and Noble Oak Bourbon and working to develop limited edition releases for franchisees to sell.  And, Doug, as a Canadian-American, is in talks to take the franchising of custom bourbon to Canada, and ultimately, around the world.

The Texas Whiskey Festival and Remington Family Distillers are excited to release a bourbon barrel aged Caffe Del Fuego

AUSTIN, TEXAS (PRWEB) – The Texas Whiskey Festival and Remington Family Distillers are excited to announce the release of the Ironroot Republic Distilling bourbon barrel-aged Caffe Del Fuego collaboration.

Tejas, the Spanish spelling of the ancient Caddo word for “friend” or “ally,” is a collaboration between the festival and various Texas distillers to create unique offerings that showcase their methods and character. Each bottling will be a limited release available only through the respective distiller.

The Ironroot Republic Distilling bourbon-barrel-aged Caffe Del Fuego is the second release in the Tejas collaboration series. Caffe Del Fuego is coffee liquor done right. “As lifelong whiskey drinkers we have always loved how it pairs with our product. That’s why we were super excited by this project. By aging Caffe Del Fuego for a year in Ironroot bourbon barrels we were able to create a special release that really captures the best of two great spirits. Our rich coffee taste, their smooth, smoky accents, and the deep caramel and vanilla flavors from both come together into something truly noteworthy. New Deal Distillery’s Old Tom Gin wins Best of the Northwest

PORTLAND, ORE. (PRWEB) – New Deal Distillery’s Old Tom Gin wins Platinum in Sip Magazine’s 2021 Best of Northwest Barrel Aged Gin category. Distilled with over 20 botanicals and barrel-rested in French oak, this amber colored gin bridges Portland’s craft distilling scene and Oregon’s winemaking tradition.

New Deal’s founder, head distiller, and self-proclaimed “young Tom”, Tom Burkleaux tinkered and experimented with this gin recipe for years before finally making it a part of New Deal’s permanent line of spirits this past May. Embracing their proximity to the Willamette Valley, this final rendition of Old Tom Gin is aged in Oregon wine barrels and slightly sweetened in the traditional style, creating a warm, toasty, and highly sippable spirit. Burkleaux explains that “while Old Tom is not a new style of gin, it is a style that’s continually evolving. Old Tom is a large and diverse category that has historically encompassed both barrel aged and sweetened gins, and we set out to combine the two.”

So, why is it called Old Tom Gin? In 18th century England, before London Dry Gin stole the show, Old Tom was the gin of choice. It was so popular that several prohibitive laws were enacted to curb its consumption but this only drove the gin scene underground. Since gin was nearly outlawed, pubs secretly selling this ‘mothers ruin’ would alert interested parties to its availability by putting a wooden plaque of a tomcat outside their building. After a coin was deposited through a slot in the wall, the bartender would slyly pour a shot through a pipe out to the patron. Some say it’s this reference to the old tomcat plaque that gives Old Tom Gin its name. However, like much of the history of spirits and cocktails, the exact answers are not known. There are other theories, some having to do with a tomcat falling into a vat of gin or an older distiller named Tom.

What is known for sure is that aging a spirit in wooden barrels affects its overall flavor profile — the gin can take on barrel characteristics like vanilla, clove, oak and smoke. For this reason, Old Tom Gin is often popular with whiskey fans as the gin takes on some of the same notes of barrel aged whiskey and can be enjoyed similarly when served on ice or simply sipped neat. Código 1530 has opted to use a Mezcal Master to adjust the process such as the temperature and different types of agave rather than machinery. This human effort guarantees the highest quality and efficiency at all times, while keeping sustainability in mind. Código 1530 uses agave from three different regions to ensure that the company is never over harvesting any of its agave, and prioritizes the time needed for land regeneration from harvest.

“Código 1530 has a great opportunity when creating its mezcal to use different types of agaves to obtain a wide range of natural flavors. By carefully combining different agave types, using espadín and tobalá from different terroirs, an incredibly well balanced mezcal was found that can be enjoyed either straight or in a cocktail,” Co-Founder/co-CEO Federico “Fede” Vaughan explains.

“‘Pearls’ tell the first story of mezcal, giving you a rough estimate on its ABV. It is by tradition we still view this method as our first stopping point in our process, allowing the gourd and benecia to produce ‘pearls’ while we watch for the size of the bubbles and how long they take to dissipate. This is our traditional method, our starting point, but certainly not our end point,” Vaughan said.

The Ancestral expression keeps with the ancient process and honors the origins of mezcal, the people producing it, and the region of Oaxaca. Because no machines or automation are involved in the process, the higher priced mezcal, Ancestral, is even more rare and has a different profile than the Artesanal mezcal. Starting with a sweet, earthy nose, notes of honey, tobacco and salinity from clay can be tasted, followed by bright minerality, vanilla, cantaloupe and hazelnut to finish. The agave is mashed by hand using a wooden stick, the fermentation is done in a leather vat, and the distillation in clay pots. This can only be done by a master distiller with vast experience and knowledge of mezcal, which is what makes this process so valued and appreciated. This unique mezcal is inherently sustainable because the process is so slow, and so careful, that overproduction is not possible. There are no machines anywhere in our ancestral process, and the fermentation vats, stills, and pestle have been used for generations.

The Artesenal expression follows the traditions of mezcal, incorporating a donkey-pulled tahona wheel, wild fermentation with begasso, and copper still for distillation. A market standout, due to the use of different terroirs that capture the flavors of different elevation regions of Oaxaca. This includes a wild tobalá incorporated in the process, to capture the bold notes of western Oaxaca. The Artesanal mezcal is then rested in sauvignon blanc wine barrels to take advantage of the herbaceous aroma to create something unique with notes of floral, light woody vanilla, citrus, dark cherry with hints of earth and clay and a delicate, subdued smoke.

“Experience Summer at the Pace of Portalegre, Portugal” via a 2019 Quinta da Fonte Souto Branco

During this long summertime period the weight of the heat can be lifted…when I get a new-to-me wine for review.

This time it’s a 2019 Quinta da Fonte Souto Branco, DOC Alentejo, Portalegre. Before I opened the bottle to make my tasting notes I learned (see “more information” below) that the word fonte means water and the other word foreign to me, souto, means chestnut grove. Wine made with water from a chestnut grove sounded just perfect to me.

Also learned that this the grape, Arinto, a popular variety in Portugal, was blended with 25% Verdelho grapes to make this wine.

My Notes

Pretty light yellow with just the slightest tinge of shiny green grass in color, then came aromas that included sweet pineapple, green apple, cream, toast and a little ash – really different than what I’ve noted in any other white, must be the Arinto grape I’m unfamiliar with. On the taste, I noted crisp lemon-lime, lemon pith, tart apple, pineapple again and the fruit holding on for a long satisfying finish. There was a mild acidity, that also contributed to the finish, but it was the citrus – notably the lime and lemon – that really gripped the front of my palate. We enjoyed this wine with a Chicken Fettucine Alfredo, as I thought the crispness of the wine would serve to both cut through and complement the rich creamy sauce. And it did.

The grapes were handpicked and de-stemmed followed by a gentle crushing and then briefly fermented in stainless steel before aging in a combination of new French and central European oak. The result is a golden wine with aromas of subtle, smoky toast and hints of vanilla, floral, honeysuckle, and a touch of grapefruit. The palate gives way to a welcoming creamy texture, punctuated by hints of lichee, yellow plum, tea, and white pepper.

Yellow Rose Distilling Unveils Harris County Whiskey

What We Found at the Nightclub and Bar Show Las Vegas

We’ve been covering the Nightclub and Bar Show in Las Vegas for a few years. Usually I attend the classes and share what I’ve learned, while Eddie visits with and photographs his favorite vendors. This time we both visited with as many vendors as we could over two days. We saw a lot of new technology for F and B (front and back of the house. For these establishments the front refers to the area we see: entrance, dining, bar. The back refers to the kitchen, storeroom and anything else we can’t see.)

Introducing Mezcal Rosaluna, an Earth Agave Spirit With a Smooth Finish

LOS ANGELES (PRWEB) – Made in a small Mexican village in Oaxaca, Mexico, Mezcal Rosaluna has officially launched in the United States and is available online and in-store. The handcrafted Mezcal is produced from self-grown agave and offers complex notes of both citrus and tropical fruits, combined with a hint of agave smoke and a silky smooth finish. Mezcal Rolsaluna is created by a brother and sister duo from the quaint town of Santiago Matatlán, which is often referred to as “The World Capital of Mezcal.” Their family perfected the craft of creating Mezcal over the course of six generations, leaving the sibling duo with the ability to grow, farm, ferment, and distill agave from seed to bottle; the result of this is a fully-integrated process that is both sustainable and carbon neutral. The process begins by planting baby agaves and nurturing them for eight years, with hand-cleanings and constant maintenance of fresh, Matatlan soil. After eight years, the heart of the agave is harvested by removing the leaves and extracting just the sweetest part: the piña in the middle. These are then taken to an underground pit and carefully placed atop a stone-buried fire to be roasted for up to five days (adding that cooked, smokey flavor to the Mezcal). These roasted pineapples are then taken to a mill to extract juices and fiber, and are then fermented with water for up to eight days. Finally the remains are distilled, with the head and heart of the first distillation going back in for a second round, separating alcohol from water to truly enhance the purity of the Mezcal.

The result of this process is a robust Mezcal designed with intricate layers of complimentary flavors, all highlighted by a smooth finish. Its aroma is built on tropical fruits and notes of citrus, cinnamon, and ginger, all of which pair beautifully with the caramel notes of the roasted agave hearts. Mezcal Rosaluna pairs well with numerous drinks and fruits including cranberry, coffee, and grapefruit, while also leaving room for experimentation and design. The makers themselves have lovingly crafted 16 unique cocktail recipes that include Mezcal Rosaluna, including the Pink Moon Paloma, the Topo & Luna, and the Seventeen Fifty. No matter how it’s mixed, every sip is a beautiful and intricately woven blend of flavors that is the result of generations of refinement from the World Capital of Mezcal.

The unveiling of Blue Run 13.5-Year-Old Single Barrel Cask Strength Bourbon comes on the heels of Blue Run’s inaugural release in October of 2020. Blue Run 13-Year-Old Bourbon received exceptional reviews and sold out quickly. With Jim Rutledge as the company’s Liquid Advisor, this new batch of Blue Run will delight Bourbon drinkers around the country. Each of the ten barrels comes from the same mash bill, same yeast, same still and same warehouse, but how the liquid reacted to the wood and its position in the warehouse can delicately change the characteristics of the whiskey. Blue Run 13.5-Year-Old Single Barrel Cask Strength Bourbon has the brand’s characteristic smooth and mellow flavor; a long, sweet and dry finish; little to no burn on the back end – even at cask strength – and a long tail.

Between 104 to 150 bottles will be available from each barrel, with the proofs varying from 124 to 132. The secret to which barrel the Bourbon came from can be found on the hand-numbered label, which gives a hint at that whiskey’s particular characteristics and flavor profile:

“These are their winners, but remember the best whiskey is the one you like,” says Co-Founder Jake Clements. Festival attendees will have the opportunity to vote on their favorite distillery to decide on the people’s choice.
