If there’s one dish every cook should have in their arsenal, it’s roast chicken. Not just any old roast chicken, I’m talking show-stopping, succulent, seasoned from the inside out, browned and beautiful on the outside, easy enough for a weeknight, but impressive enough to make your mother-in-law jealous, “Why can’t we have roast chicken every day?” Roast Chicken! Of course, this recipe comes with a few surprises to make it worth all the hype. If you can roast the perfect chicken, you can rule the world (or at least your kitchen).
Before we talk chicken, we’ll kick things off with a menu that squeezes the last bits of summer from the market and starts moving into fall. A crisp and bright Endive Salad with Walnuts, Blue Cheese and a peppy Orange Vinaigrette, plus a simple, dual-colored soup of sweet corn and spicy red peppers.
For dessert, a sweet and easy rustic Blueberry Tart with Lemon Cream. A nice way to finish up this homey and comforting meal.
