Ember Restaurant at We-Ko-Pa Casino Resort Receives Wine Spectator “Best of Award of Excellence” for 2021

August 14, 2021 by evebushman

FORT MCDOWELL, Ariz. /PRNewswire/ — Today, the We-Ko-Pa Casino Resort is thrilled to announce that Ember, its fine dining restaurant, has received Wine Spectator‘s esteemed “Best of Award of Excellence.”  The honor recognizes recipients that offer extensive selections with excellent breadth across multiple regions and significant vertical depth, and Ember is now one of 19 restaurants (out of nearly 9,000) in Arizona – and one of approximately 1,000 around the world – to receive this award.

This is the second time that the Fort McDowell Yavapai Nation has been lauded by this highly regarded industry publication.  In 2006, the Ahnala Mesquite Room received the “Award of Excellence,” recognizing the restaurant’s wine list that featured a well-chosen assortment of quality producers along with a thematic match to the menu in both price and style.  The fact that the tribal nation has now been granted two Wine Spectator awards for excellence – an achievement rare among tribal casinos – affirms their commitment to delivering an exceptional culinary experience.

“American restaurants are back in business, as patrons are eagerly returning to dining rooms across the nation,” said Marvin R. Shanken, Editor and Publisher, Wine Spectator. “In this year’s Restaurant Awards issue, we reflect on how restaurateurs navigated this incredibly difficult period, and look ahead, with every indication that the coming year will be one of the most promising in decades for an industry we all love. It’s been a long road back, and it feels wonderful to celebrate restaurants and all they bring to the world of wine.”

“The ‘Best of Award of Excellence’ really belongs to our advanced sommelier Dennis Payne, whose 31 years of experience and painstaking efforts over the past year have resulted in this impeccable award-winning wine list,” added Zac Gallo, Executive Director of Food and Beverage for the We-Ko-Pa Casino Resort.  “Not only has Dennis cultivated an extensive  wine and spirit program, but he ensures the proper care, storage and handling of our collection to maximize our guests’ dining experiences.”

Ember’s wine program covers seventeen countries, focusing on each country’s top wine-producing regions and most highly acclaimed vineyards.  It includes 517 wines by the bottle and 26 wines by the glass – ranging from a strong California presence to Barbaresco, Rioja, New Zealand, Argentina and Germany – along with 30 Dessert Wines from across the globe as well as 15 Ports and Madeiras.

In addition, Ember has a special page in their 37-page wine list titled “The Century Club,” dedicated to the world’s top 100-point wines.  Curated for fine wine collectors, this list contains 32 critically acclaimed wines spanning more than two decades that have scored a perfect 100 points.

Wine Spectator began its program to recognize the world’s best wine lists in 1981. There are three levels: the Award of Excellence, the Best of Award of Excellence and the Grand Award—with 1,673; 1,141; and 103 winners this year in each respective category.

All award winners will be featured in Wine Spectator‘s special 40th Anniversary Restaurant Awards issue, available to readers today.

Largest Restaurant Offering of Chateau Petrus in U.S. Comes to San Ysidro Ranch

May 31, 2021 by evebushman

Stonehouse Restaurant at Santa Barbara Resort Installs 70-Bottle Vertical Collection of Chateau Petrus, Capping Off Revitalization After Cellar Destruction

SANTA BARBARA, Calif., /PRNewswire/ — With the arrival of a rare 70-vintage vertical collection of Chateau Petrus in the newly re-built cellar of the Stonehouse restaurant at the famed San Ysidro Ranch resort, the reconstruction of one of the world’s most renowned restaurant wine collections has been completed. The Petrus collection at the award-winning Stonehouse, represents the most extensive restaurant offering of Petrus in the United States.

The 70-bottle vertical of Chateau Petrus includes every bottle produced by the renowned Bordeaux estate reaching back to the famed 1945 vintage and including the famed 1947, 1959, 1961, 1964, 1982, 1990 and 2000 vintages. This rare collection of wine serves as the centerpiece of the reconstructed Stonehouse restaurant wine cellar, which saw its entire inventory of 12,500 bottles destroyed by mudslides that flowed through the resort and restaurant in January 2018.

“Recreating the Stonehouse’s wine cellar was a painstaking process,” said Stonehouse wine director Tristan Pitre. “Patience and persistence paid off for us when we finally procured and received delivery of this historic collection of one of the greatest wines in the world.”

In procuring this world-class collection of Petrus, San Ysidro Ranch insisted that its authenticity and provenance be beyond question. Working on behalf of the ranch, The Wine Source located the wines in Bordeaux, where they had sat undisturbed with the original purchasers who acquired the bottles directly from the Chateau upon their releases. The provenance, storage and authenticity thus were determined to be impeccable.

“Without question the Stonehouse Petrus vertical is the most extensive restaurant collection of Petrus in America and one of the most extensive collections anywhere in the world,” said Ty Warner, owner of San Ysidro Ranch. “More importantly, the ranch’s collection represents the hard work and commitment that went into returning the Stonehouse and its wine program to greatness following the disastrous events of 2018.”

San Ysidro Ranch is part of Ty Warner Hotels & Resorts, which was founded by entrepreneur Ty Warner. Ty Warner Hotel & Resort Properties include:  San Ysidro Ranch, Four Seasons Resort The Biltmore Santa Barbara, Four Seasons Hotel New York, Las Ventanas al Paraiso, Montecito Club, Coral Casino Beach and Cabana Club, Sandpiper Golf Course and Rancho San Marcos. Volcanic Wines International Concludes Successful Second Annual ‘International Volcanic Wine Conference’

August 4, 2019 by evebushman

NEW YORK (PRWEB) – Volcanic Wines International (http://www.volcanicwinesinternational.com) held its second annual ‘International Volcanic Wines Conference (IVWC)’ on June 5th, 2019 at the Stewart Hotel in New York City. Hosted by John Szabo, Master Sommelier and award-winning author, the event followed the success of the first International Volcanic Wine Conference in March 2018 and Szabo’s definitive book on the subject, ‘Volcanic Wines: Salt, Grit and Power,’ published in 2016. Exclusively for qualified wine trade and media, over 250 industry professionals attended the event.

“This year’s conference really focused on the educational side of the subject. The opening session in particular, an exploration of the chemistry of perceived and measurable minerality, really captured the attention of attendees, said John Szabo MS. “The Soave workshop explored aspects of viticulture; the Vesuvius workshop dug deep into history and archeology, while the vertical tasting of Galardi explored the ageability of volcanic wines – all critical aspects of the category. And of course, there were hundreds of exceptional wines to taste and compare and contrast. “It’s very satisfying to see how the volcanic wine movement — and the annual conference— continue to gain traction and attract interest.”

The IVWC began with an opening presentation hosted by John Szabo and Benoît Marsan Ph.D., Chemistry Professor at the Université du Québec in Montréal and Wine Chemistry Specialist. Szabo and Marsan presented the results of their joint research study related to minerality, exploring the presence of succinic acid in volcanic wines and its influence on perceived saltiness. Throughout the afternoon, members of the wine trade and press participated in additional unique workshops highlighting different volcanic wine regions, as well as a walk-around tasting.

“It was a terrific opportunity to take a deep dive into the complex interaction between vines and volcanic soils, both through tasting and talking with vintners from around the world,” said Tara Q. Thomas, Executive Editor of Wine & Spirits Magazine, the media partner for the event. “The session with Professor Marsan, who gave a crash course in inorganic chemistry, was an extra bonus, offering us a deeper understanding of the many ways soil chemistry can affect what we taste in our glasses.”

Regional seminars included “Earth, Ash and Fire: Three Decades of Galardi from the Roccamonfina Volcano,” sponsored by The Winebow Group; “Soave, A Volcanic Agricultural Heritage,” sponsored by the Consorzio Tutela Vino Soave; and “Vesuvius Lacryma Christi Stories,” sponsored by the Vesuvio DOP Consorzio Tutela Vini. During the tasting workshops, winemakers and experts from these regions delved deeply into the factors that makes these volcanic wines special.

Volcanic Wines International continues its mission of exploring the defining characteristics of volcanic wines. The conference acted as a catalyst for the volcanic wine community, bringing together producers from all over the world and raising the profile of volcanic wines, defined as a unique category of wines produced under some of the most extreme viticultural conditions on the planet. During the conference, guests were able to sample wines from over 60 wineries and 23 volcanic wine regions, and engage with some of the world’s leading volcanic wine experts during workshops.

“It was a great event, offering insight into the world of volcanic wines,” said Tara Empson, CEO of Empson USA, which showed wines from Soave producer Tenuta Corte Giacobbe Dal Cero. “The seminars tied together the many factors that help shape and characterize these remarkable wines. The grand tasting was diverse, as there were volcanic wines from many parts of the world, which helped attendees understand the similarities and differences of these wines.”

For more information and the latest updates, visit Volcanic Wines International’s official website http://www.volcanicwinesinternational.com, and follow VWI’s Facebook (Volcanic Wines International) and Instagram (@volcanicwines_intl) pages.

About Volcanic Wines International (VWI)
The mission of Volcanic Wines International is to take the leading role in defining and establishing a Volcanic Wine Movement, and to provide educational and promotional opportunities for volcanic wine producers internationally. Volcanic Wines International also plans to establish the volcanic wine brand as a premium category of high quality wines with a true sense of place.

Charlie Palmer and Clay Mauritson Take On Down Syndrome with their 9th Annual Project Zin

July 28, 2019 by evebushman

Saturday evening’s Project Zin event lines up 21 of the most highly acclaimed Zinfandel wines from Northern California. The number 21 is significant: in most cases of Down Syndrome there is an extra copy of chromosome 21, which changes the body and brain’s normal development. Clay and Carrie Mauritson’s ten-year old son Brady was diagnosed with Down Syndrome at the age of 2 ½, which led the Mauritson family to seek support from friends, family, and community organizations, including the Down Syndrome Association, North Bay (DSANB). In addition to DSANB, Clay solicited the aid of his close friend and winemaking partner, Chef Charlie Palmer, and Project Zin was born. In the years since Project Zin’s inception, the Sonoma County winemaking and culinary community has come together to raise over $750,000 for DSANB, providing much needed funds for research and support for individuals and families affected by Down Syndrome. A letter from Clay and Carrie Mauritson highlighting their personal challenges with Down Syndrome and the subsequent support they received from the DSANB can be found here.

Chef & Winemaker Talent

Now in its ninth year, the local and global winemaker and chef community comes out in droves to support a fellow winemaking family, as well as DSANB, including such prolific wineries as Robert Biale Vineyards, Carlisle Winery & Vineyards Ridge Vineyards, Williams Selyem, Seghesio Family Vineyards, and acclaimed wine country restaurants Dry Creek Kitchen, Valette, and SingleThread Farm – Restaurant – Inn, and more. Newhall Refinery NEW Reserve Wine List is a Wish List For Everyone

October 27, 2018 by evebushman

Several factors should go into play when creating a wine list. As a consumer we may not be aware of all of them. As a wine writer I get to learn some of them. Here’s what I learned and what you can now expect from the new Reserve Wine List at Newhall Refinery.

Simon and Shannon Mee, owners of Newhall Refinery, already had re-vamped their existing Wine List with the help of Guy Lelarge, formerly of Valencia Wine Company. Lelarge introduced several new wines – that have become new favorites – while removing some older wines from the list. But it doesn’t end here for the Mees and Lelarge, as Newhall Refinery is one of the most cutting edge restaurants in the Santa Clarita Valley (many would argue that they are the most cutting edge) they wanted to create a reserve wine list that would encompass classic Napa wineries as well as global favorites, wines with high critic scores, name recognition and pair the best with their ever-changing fare.

One look at the new Reserve Wine List (below) and wine aficionados will notice a Far Niente vertical, 2010, 2011 and 2012 – of their Cave Collection Cabernet Sauvignon. They may also notice that the selections also include global choices – notably France and Italy – to pair with the dinner menu, Chef Dustin’s weekend menus and of course, the upcoming holiday parties and special events in The Cellar at Refinery.

These new reserve wines are now safely tucked away, in a temperature controlled wine fridge in The Cellar, near to the decorative racks of wines that will still be available from the latest wine menu.

There will be three by-the-glass selections, all Napa Cabernet Sauvignons: the 2015 Duckhorn, 2014 Silver Oak and a 2012 Heitz Trailside. How can they possibly open such nice bottles just for a glass? The Mees have purchased a Coravin Model 2, which is a unit that extracts wine from the bottle without removing the cork. Usually winery representatives and distributors use this model. Lucky for us, the Mees know the value of fresh wine as well.

Lastly, there are only a select number of these wines that are currently available, so don’t wait too long to come in and try a new dinner pairing at Newhall Refinery!

My own opinion of this new Reserve Wine List: it’s incredible! And now we both now know – and can appreciate – what should go into the selection process.

“2012 is one of the most exciting vintages this Valley has seen in a decade,” says vintner, Kathryn Walt Hall. “We are thrilled with how Steve and his winemaking team have consistently crafted this wine each year, maximizing each vintage to produce the best possible result. This is truly the best fruit Napa has to offer.”

Bringing together winemakers, wine-lovers, fans and foodies alike, guests will be invited to enjoy a sun-filled afternoon outdoors to sip on the newly released 2012 Kathryn Hall Cabernet Sauvignon. This wine was recently rated 97+ pts by Robert Parker.

In addition to the main event, a rare Vertical Tasting hosted by Steve Leveque will take place from 10:00 a.m. to 11:00 a.m. in the historic Bergfeld building. The experience will include a tasting flight of Kathryn Hall Cabernet Sauvignon (vintages 2007 – 2012).
