Eat Local in the Nordics: Top Culinary Experiences For All

NEW YORK (PRWEB) – The Nordics, a coalition of the seven Nordic tourism boards of Denmark, the Faroe Islands, Finland, Greenland, Iceland, Norway, and Sweden, represent a region known internationally for its gastronomy. In addition to creative cuisine, The Nordics are committed to offering sustainable culinary experiences. This was solidified in 2004 when each country signed the Nordic Food Manifesto which contains 10 principles on purity, season, ethics, health, sustainability, and quality that are embodied by hotels and restaurants across the seven countries. Currently, The Nordics boast 65 Michelin starred restaurants, 20 of which have been recognized with a Michelin Green Star for their sustainable practices, and more than 260 Michelin-recommended restaurants.

In The Nordics, there are plenty of opportunities for visitors to eat like a local, whether at a restaurant or in a truly immersive experience out in nature.

OYSTER SAFARIS IN DENMARK
The UNESCO World Heritage Wadden Sea National Park is one of the world’s most important tidal zones and also the site of oyster safaris. Visitors at low tide can strap on waterproof boots and follow a guide to the oyster banks to gather the plentiful Danish delicacy for a tasting while learning the history of oysters in the area along the way. Tours last approximately 2.5 – 3 hours and take place in February through May and September through December. Sort Safari offers oyster safaris at DKK 275 (approximately US$40) which can be booked here. Those who want a full gastronomy trip should look at one of Denmark’s 26 Michelin-starred restaurants, vineyard visits to Europe’s northernmost grape-growing area, foraging tours, and a food walk in Copenhagen. In 2020, Michelin awarded 11 Danish restaurants with the Michelin Green Star. In 2021, World’s 50 Best Restaurants awarded the first and second spot to Denmark restaurants Noma, a Michelin Green Star recipient, and Geranium.

FAROE ISLANDS’ HOME HOSPITALITY
Traditional cuisine reigns in the 18-island archipelago of the Faroe Islands where Heimablídni, Faroese for home hospitality, is listed on the United Nations’ Sustainable Consumption and Production list.
The Faroese welcome travelers into their homes where they serve homemade dishes created from their own or their neighbors’ farms while sharing stories that relate to the country or local village. An array of experiences, from traditional dinners to day-long fishing and cooking excursions, can be booked online with rates starting at DKK 350 (approximately US$50). One restaurant that should be on the itinerary of any foodie is Ræst, which is Faroese for fermented. The menu is dedicated entirely to traditional Faroese fermented foods and combines modern gastronomic trends with ancient food traditions.

FINLAND FORAGING
Finland is actively creating sustainable solutions for food sourcing and production. Finns and visitors have “Everyman’s Rights,” a law that allows anyone the freedom to forage, fish (with a permit), and more. Finnish forests are brimming with nutrient-rich arctic superfoods in summer and early autumn that yield blueberries, chanterelles, and cloudberries. METTÄ’s Helsinki Wildfoods collective offers wild herb courses and foraging excursions, and guided mushroom-picking tours, like the ones offered at Hotel Punkaharju in eastern Finland, are also great for beginners. Those looking for something different and truly unique can travel to Lahti, the 2021 European Green Capital. There, Ant Brew’s latest “Wasted Potential” beer series includes Boreality Check which uses lichens from the north, Dumpster Diver brewed with orange peels from a local juicer, and Goosebumps that utilizes aromas from goose droppings. In Helsinki, Nolla was born out of a desire to serve great food with a waste-free ideology. Their in-house composter provides suppliers with composted soil to take back to their fields.

GREENLAND’S FRESH CATCHES
Every town in Greenland has a local fish and meat market called Kalaaliaraq (“little Greenlander”) where daily catches are sold. In addition to buying straight from the source, visitors can catch their own meal, dine with a local, or enjoy fine dining. Qooqqut Nuan, accessed by boat from Nuuk, is one of the most isolated restaurants in the world and features vegetables grown locally and fish from the nearby fjord. Visitors may catch their own fish which the restaurant will then prepare for them in one of several different ways. To dine with a local, the Greenlandic tradition of kaffemik, a large celebration hosted by a local, can be considered. Visitors can book a kaffemik experience which provides insight into Greenlandic homelife. The two Michelin-starred restaurant KOKS from the Faroe Islands is setting up shop in Ilimanaq north of Nuuk for the summers of 2022 and 2023. It will open in Ilimanaq Lodge, one of the oldest houses in Greenland, and have a focus on the clean, pure flavors of the ocean with plentiful seasonal herbs and wildflowers.

ICELAND’S GEOTHERMAL FARM-TO-TABLE
Geothermal energy is key for Icelandic cuisine and its organic produce. Icelandic farmers rely on greenhouse farming, which is heated and powered by readily available, 100% renewable geothermal energy. Visitors to Laugarvatn Fontana can see how Icelanders use geothermal energy to bake bread. For ISK 2300 (approximately US$18), participants can learn how the popular rye bread is baked underground near a hot spring, see the pot dug out of the hot black sand, and enjoy the bread while it’s still warm from the ground. Visitors can also enjoy farm-to-table experiences like a meal at Friðheimar’s greenhouse surrounded by tomato plants. With three different varieties grown on site, offerings include tomato soup, green tomato and apple pie, green tomato jam, tomato beer, or tomato schnapps (a hollow tomato filled with Icelandic Birch schnapps). Other places of note for farm-to-table cuisine include the Efstidalur farm hotel and Vogafjós farm café.

NORWAY UNDER THE SEA
Traditional Norwegian cuisine is largely a reflection of the environment, utilizing materials readily available in the country’s mountains, wilderness, and coast. Norway’s most unique dining experience combining marine research, architecture, and gastronomy can be found near the coast in Lindesnes. Under Restaurant allows travelers to dine underwater beneath a concrete shell created to act as an artificial reef. Half sunken 16 feet into the icy waters, Under provides visitors with an opportunity to view the rarely seen marine ecosystem of the North Atlantic Ocean while enjoying an 18-course, seafood-forward prix fixe menu with available wine pairings. Visitors can also time their visit with one of Norway’s popular food festivals, including the Gladmat food festival in Stavanger (June), Trøndelag Food Festival (July), and the Matstreif in Oslo (September).

SWEDEN’S BEST
Every year, the Nordic 360° Eat Guide recognizes establishments that showcase culinary excellence with sustainable practices. The 2021 standout nominees included Musselbaren which utilizes organic, locally-sourced ingredients with mussels as the star of the show. The restaurant offers a 4.5 hour mussels tour in a west Swedish fjord where participants will learn about the area, harvest their own catch, and prepare their meal. The grand finale is moule frites with fresh bread and aioli. Northwest of Stockholm, travelers can tour Sweden’s oldest orchard Köpings Musteri, an organically certified cider farm where a 1.5-hour tasting tour showcases 40 apple varieties and the cider production process. Set in the forests of Dalsland, Swedish Country Living offers guests a guided tour to learn about the property’s holistic approach to food, sustainable buildings, and regenerative agriculture. Standout Stockholm restaurants include Fotografiska which has a plant-based kitchen that received a Green Star from Michelin in 2021; Hermans, a vegetarian establishment where even the company car runs on biofuel; and K-märkt which focuses on reducing food waste by selling the food by weight.

A LONG TRADITION OF WINEMAKING

With over 30 years of history and a winemaking tradition dating back more than eight centuries, Abadía Retuerta finds its true essence and raison d’être in its single-plot Pago wine, which reflects all the personality and uniqueness of the local terroir. The abbey’s monks were the first to grow grapes and make wine on this site, right on the banks of the Duero, with its long tradition of winemaking. Today, the winery is perfectly integrated into the stunning surroundings, and Abadía Retuerta is one of the most renowned wine producers in the area.

The estate spans 700 hectares, and its vineyards are divided into distinct plots or “pagos”: there is the Pago Negralada (100% Tempranillo); Pago Valdebellón (100% Cabernet Sauvingnon); Pago Garduña (100% Syrah) and Petit Verdot (100% Petit Verdot).

Abadía Retuerta is one of the most innovative and technologically advanced wineries in Europe. Designed by French wine expert Pascal Delbeck, its current consultant, and aided by the viticulturist and wine expert Ángel Anocíbar, it was one of the first facilities in Spain to move wine using gravity alone. Its system for lifting tanks with cranes, as well as its own patented system for transferring wine, are particularly noteworthy.

The estate’s unique wines have won numerous prizes and awards. For instance, Abadía Retuerta Selección Especial 2001 won the prize for Best Red Wine in the World – Red Wine Trophy, at the 2005 International Wine Challenge in London (Wine Magazine, UK).

UNWIND AT SANTUARIO WELLNESS & SPA

A true oasis, right at the heart of nature. Santuario Wellness & Spa was opened in 2015, as a haven of wellbeing. It is built into an underground space where the abbey’s stables used to be, while several openings ensure 80% natural light, making a warm and cosy environment. It measures over 1000 m2, and its water is extracted from a well at a depth of 120 metres, before being decalcified and, after undergoing reverse osmosis, stored in a 120,000-litre tank, thereby providing a quality of drinking water similar to natural mineral water.

Santuario Wellness & Spa strives to innovate: it has its own Spa Sommelier, who designs a tailor-made experience that matches guests’ physical and emotional needs and expectations. The philosophy is based on traditional Tibetan medicine and its key elements, namely wind, fire, earth and air.

One of the exclusive holistic experiences, as offered by Santuario LeDomaine Wellness & Spa since 2020, is the session with Tibetan Singing Bowls, as part of the Balancing Ritual VibraHealing®. This rounded experience focuses on relaxation and reaching a state of balance in both body and mind.

A TASTE FOR ART

Fine art is important to Abadía Retuerta LeDomaine. The estate has its own open-air museum, by the German sculptor Ulrich Rückriem, as well as a private collection with over 170 works. These pieces range from the 12th to the 21st century, by artists including Palma il Giovane, Guardi, Panini, Joan Miró and Rückriem. There are also French tapestries, antique Spanish furniture, paintings, sculptures, reliefs and rugs. One of the latest additions to the collection is ‘Rumor de Límites V’ (1959) by Eduardo Chillida, a unique piece sculpted in steel, which is currently on loan to the Museo San Telmo in San Sebastián. In its place, guests can contemplate ‘Lotura’ in the Jardín de Hospedería, also by Chillida. Furthermore, in 2021, a new artists’ residency project was launched, in which national and international artists are invited to live and work at the resort. The first guest artist was Abderrahim Yamou (Casablanca, 1959).

The ancient Abbey of Santa María de Retuerta has become much more than a hotel and winery. It is a project that strives to uphold and enhance a legacy that goes back over nine centuries, with a sense of responsibility and generosity. Rtveli Grape Harvest in Kakheti, Georgia, September 2022

Known as the birthplace of winemaking, Georgia’s oenophilic history dates back more than 8,000 years, all the way to the Stone Age. Kakheti has emerged as one of the most exciting and surprising wine destinations in the world with more than 200 indigenous wine varieties linked to this region, and producing locavore Georgian grape types, including Rkatsiteli, Kakhetian Mtsvane, Khikhvi, Kisi, and Saperavi.


For wine seekers, September is perhaps the most exciting time of year to travel across the country and walk the mineral-rich land to visit wineries during Rtveli, the local term for the grape harvest season. Georgian vineyards and wineries have retained the original, natural-wine making methods that were banned under Soviet rule but revived over the past decades, which involves fermenting the wine in clay vessels called “qvevri” that are buried into the ground.


The Qvevri is an egg-shaped earthenware vessel used for making, aging and storing wine. Knowledge and experience of Qvevri manufacture and wine-making is passed down through families, neighbours, friends and relatives, all of whom join in communal harvesting and wine-making activities. Children learn how to tend the vines, press grapes, ferment wine, collect clay and make and fire through observing their elders. The wine-making process involves pressing the grapes and then pouring the juice, grape skins, stalks and pips into the Qvevri, which is sealed and submerged into the ground so that the wine can ferment for five to six months before being consumed.

California Wine Country And National, State Parks Make Perfect Summer Pairing

SAN FRANCISCO — California wine lovers don’t have to choose between visiting the Golden State’s majestic parks and touring its diverse wine regions. That’s because many of California’s national and state parks are located within or near some of the world’s most famous winegrowing areas. What could be better after a morning hike in the woods than a relaxing afternoon among the vineyards with a delicious glass of California wine?

To help with summer travel planning, Wine Institute has curated pairings of California wine regions with nearby national and state parks. With 143 AVAs (American Viticultural Areas) across the state, travelers won’t have to go out of their way to find incredible wine tasting opportunities close to their park-touring adventures. Along with inviting visitors to recharge while sipping the latest vintages, many wineries offer activities like vineyard hikes and cycling. In California wine country, it’s all about a balanced lifestyle.

Travelers can get information about visiting California’s parks, including current COVID-19 guidelines, at the National Park Service and California Department of Parks and Recreation websites. Some of the most popular parks require visitors to book ahead for day passes and/or camping during the busy summer season. Multi-day events such as the inaugural California State Parks Week June 14 to 18 offers a variety of events from which to choose.


NORTH COAST
Sonoma County & Armstrong Redwoods State Natural Reserve
Ancient Coast Redwoods — the world’s tallest trees — are the main attraction at this 800-acre park and natural preserve. Located just a few miles north of the town of Guerneville, Armstrong Redwoods State Natural Reserve lies within the Russian River Valley AVA in Sonoma County. After hiking and picnicking among the preserve’s towering trees, take time to explore the local wineries. Home to more than 90 producers, the region is famous for Pinot Noir and Chardonnay. The charmingly rustic town of Guerneville, with its riverfront cabins and lodges, is the perfect place to spend the night and enjoy river activities like canoeing and swimming. On June 25, the Taste of Sonoma is a showcase for Sonoma County wine and food. 


Napa Valley/Lake County & Robert Louis Stevenson State Park
This 5,000-acre park offers stunning views of Napa, Sonoma and Lake counties from the summit of Mount St. Helena, California wine country’s highest peak. Robert Louis Stevenson State Park’s location near Calistoga, at the northern end of the Napa Valley, also provides the perfect opportunity to visit the region’s wineries — world-renowned for their impressive and affordable Cabernet Sauvignon and Chardonnay. The town of Calistoga, with its famous mud baths, boutique hotels and restaurants, is an ideal home base for a visit to the park and local wineries. On July 26, Napa Valley hosts Taste of Napa, a celebration of the region’s wine, food and music. On Sept. 17, travelers can taste and bid on Lake County wines at the Lake County Wine Auction. 


SIERRA FOOTHILLS/CENTRAL CALIFORNIA
Sierra Foothills & Calaveras Big Trees State Park
Calaveras Big Trees State Park in Gold Country presents a host of natural wonders, from groves of giant sequoias to ancient volcanic formations to the Stanislaus River. The park is just north of Arnold, in the scenic Calaveras County wine region — a haven for Spanish, Italian and French varieties. Also within the larger Sierra Foothills AVA are Zinfandel specialists Amador County and El Dorado County, which produce everything from Bordeaux varieties to wines made from Rhône, German, Italian and Spanish grape varieties. Camping is popular at Big Trees, so summer reservations book up quickly. Not to worry, though; the park is less than an hour from the old mining town of Murphys, which features hotels, inns, restaurants and more than 25 winery tasting rooms along Main Street. 


Madera Wine Country & Yosemite National Park
Rock-climbing Mecca Yosemite National Park is world renowned for its soaring granite walls and cascading waterfalls. Just south of the park is Madera County, one of California’s oldest appellations. The region is known for its dessert wines and port-style wines, and there is plenty to sample along the Madera Wine Trail. Summer camping reservations at Yosemite are quickly selling out and visitors should also book ahead for day passes, but there are a variety of alternative accommodations in nearby Mariposa, from bed and breakfasts to campgrounds to cabin rentals. 


CENTRAL COAST 
Monterey Wine Country & Pinnacles National Park
Pinnacles National Park in Soledad wows thousands of visitors each year with its unique volcanic landscape of monoliths, canyons, oak woodlands and towering rock spires frequented by golden eagles and California condors. Within an hour’s drive is the Cienega Valley Loop in San Benito County, as well as the River Road Wine Trail, which winds its way through the Santa Lucia Highlands AVA in Monterey County, celebrated for Pinot Noir and Chardonnay. Because summer temperatures at Pinnacles tend to run high — ideal for early morning hikes — the park is most popular during the cooler months. That means reservations for the Pinnacles campground are fairly easy to find for summer visits. There are also lots of lodging and tasting room options in Monterey wine country, in the quaint, storybook town of Carmel-by-the-Sea.  


Ventura/Santa Barbara Wine Country & Channel Islands National Park
The Channel Islands chain is known as “North America’s Galapagos” due to its natural beauty and wealth of rare plant and animal species. Boats to Channel Islands National Park depart from Ventura and Oxnard. From there, it’s an easy drive to the Ventura County Wine Trail, which features about a dozen wineries in a relaxed, coastal setting. In Santa Barbara wine country, the nearby Sta. Rita Hills AVA is known for Pinot Noir and Chardonnay, while wineries of the Santa Ynez Valley Wine Trail excel at Pinot Noir, Cabernet Sauvignon and Merlot. If short on time, many of these wineries offer tasting rooms in Santa Barbara’s urban Funk Zone. The National Park Service operates primitive-yet-stunning campgrounds on each of the five Channel Islands, but if that’s too much camping, book a stay in Ventura or Santa Barbara. 


SOUTHERN CALIFORNIA 
San Diego Wine Country & Torrey Pines State Natural Reserve
Torrey Pines State Natural Reserve is home to the country’s rarest pine tree, the Torrey pine, along with one of the last salt marshes and waterfowl refuges in Southern California. After exploring the reserve’s 1,500 acres of maritime chaparral and miles of beautiful beaches, pay a visit to the wineries of San Diego County. The region boasts more than 100 wineries, best known for Merlot and Chardonnay, and grows 60 different grape varieties. Torrey Pines is located within the San Diego city limits, so lodging, restaurant and other travel amenities abound.

Wine Region Of The Year — The annual Wine Enthusiast Wine Star Awards recognized Santa Barbara County, inclusive of the Santa Ynez Valley, as their 2021 Wine Region of the Year. Taste of the Santa Ynez Valley — After a two-year hiatus, one of the valley’s biggest annual events returns Nov. 3-6, 2022. Presented by Sunset Magazine, Taste of the Santa Ynez Valley is an immersive four-day food, wine, and experiential event held throughout the valley’s six wine country towns. Among the event’s many highlights include classes led by Sunset experts, cooking demonstrations, and the signature long table, multi-course wine dinners.

Trattoria Grappolo — Celebrating its 25th anniversary in 2022, Trattoria Grappolo is proof that good things do last. In an age of restaurants defined by the latest, greatest, and most innovative concepts, Trattoria Grappolo’s classic Italian fare, unassuming decor, and humble atmosphere have been satisfying hungry Santa Ynez locals and visitors since 1997.

Ballard Inn & Restaurant — Recently under new ownership, the AAA Four-Diamond rated Ballard Inn is being revitalized to celebrate its Western roots and reflect its charm and appeal as a destination for romantic getaways, family reunions, or small business retreats. The Ballard Inn Restaurant recently welcomed new Executive Chef Nikolas Ramirez. Chef Ramirez most recently served as executive chef at Loquita Santa Barbara, and spent more than four years working as a chef in Thailand. Crawford’s Steakhouse — Opened in March of 2021, Sear Steakhouse recently welcomed a new owner and chef Nathan Pietso. In addition to adding an extended late-night bar program, Pietso, a second-generation farmer, plans a forthcoming rebrand to Crawford’s Steakhouse in honor of his family name.

Lefty’s Coffee Co. — Recently opened in downtown Los Olivos, Lefty’s Coffee Co. is a coffee shop inspired by the ideals of peace, equality, acceptance, and respect for every human. Featuring specialty coffees from beans that are farm roasted in Santa Barbara County, plus specialty baked goods from Sandra Adu Zelli’s Crispy Hill Bakery, Lefty’s also boasts an expansive garden space for sipping, savoring, and private events.

The Baker’s Table — Due in large part to its popularity among locals and visitors, The Baker’s Table in Santa Ynez is preparing to relocate this summer to a newer, larger location in a historical Santa Ynez building that once housed the Santa Cota Market. Located at 3570 Sagunto Street, the new location will feature the same artisan bread, gourmet pastries, breakfast & lunch fare, and craft coffee & beverages for which it is known, with the addition of al fresco seating on a newly constructed outdoor patio.

WINERIES & TASTING ROOMS

Fess Parker Winery — Following an extensive overhaul, Fess Parker Winery reopened the doors to its renovated tasting room on April 2, with a more modern design that pays homage to the family’s roots and supports the winery’s more elevated tasting experiences. The winery’s indoor and outdoor spaces were reimagined and given a more contemporary experience for guests while incorporating the family’s unique history.

RUSACK Vineyards — In February 2022, RUSACK Vineyards – the only winery in the Ballard Canyon AVA that is open to visitors – debuted its newly remodeled tasting room. Dubbed ‘Canyon Terrace,’ RUSACK’s renovated tasting room pairs handcrafted wines with picturesque vineyard views and a relaxed atmosphere away from it all. Tastings are available by advance reservation only.

The Hideaway — The Hideaway will be moving to a new spot in Los Olivos in mid-May, as they exit the iconic “cabin” at one end of town and move down the street (aka closer to the flag pole) at 2933 Grand Ave., Suite F. The new upstairs space boasts a balcony overlooking town, and the interior vibe will be much more dynamic than its current historic feeling, with vibrant colors, eclectic furnishings, and a new lounge flair that will breathe new life into the space.

About Antoine Beucher, the founder

After studying at a journalism school (Institut Français de Presse) and obtaining a degree in Economics, Antoine Beucher worked as a host in a local channel in Toulouse and then worked for 30 years as the manager of an event agency.

Sardón de Duero, January 2022.- Abadía Retuerta, the five-star hotel and winery located in the Duero Valley, has been granted the Green Globe certificate, which commends the site as one of the most sustainable destination resorts in the world. A total of 650 hotels around the world have been given this recognition, just four of which are in Spain.

Green Globe is the worldwide certification of excellence that endorses the tourism industry’s green credentials. In order to gain this recognition, resorts must meet certain standards set by the organisation, with regards to aspects such as corporate social responsibility, conservation, and the responsible management of waste, energy and water.

Abadía Retuerta successfully passed the exhaustive audit, carried out independently and in situ by the international organisation, thanks to the sustainable practices implemented in all its work areas. They include the conservation of the site’s natural legacy, the ethical and sustainable management of resources, investment in renewable energies, caring for the surrounding environment, supporting local suppliers and their produce, cultivating a vegetable garden, engaging with social issues, reducing waste, and offering experiences related to nature. All of this has led to Abadía Retuerta being certified as a sustainable tourist destination.

This is the latest in a long line of awards and certificates that laud this destination of experiences as a truly sustainable resort. These include a Michelin Green Star for the flagship restaurant Refectorio, awarded in recognition of its focus on local and seasonal produce, as well the cultivation of as its own vegetable garden; the Wineries for Climate Protection seal of approval, granted by the Spanish Wine Federation for the ethical and sustainable management of both the winery and the environment; and the Family-Responsible Company certification, from the Fundación Más Familia, awarded for the “Responsible Choices” programme that includes flexible workspaces (i.e. working from home or elsewhere) as well as the investment in internal training (0.5% of total turnover) that Abadía Retuerta has brought in for its collaborators.

These include our new “Plastic-Free” initiative for 2022, our Woodland Management Plans, and a more active contribution to the implementation of a circular economy, via renewable energy”.

Sustainability is one of Abadía Retuerta’s fundamental pillars, a view now shared by many tourists. Sustainability has gone from being a trend, to being a key aspect of travel. “Tourists no longer just restrict their search to the location, history or reputation of the destination. Today, they want to make sure that their getaways are sustainable and environmentally-friendly, with forays into nature.
