When we got home from France this year one of the many things we missed were street vendors making hot fruit-filled crepes, always slathered with Nutella chocolate-hazelnut spread and whipped cream. Come to find out, once we got home, that Bisquick pancake mix has a recipe for crepes. From there it was very easy to add in the fillings we wanted. This is a photo of our version:
You can buy the Bisquick mix and follow the recipe, but it’s basically:
1 cup Bisquick
3/4 cup milk
2 eggs
2 tablespoons butter
Put it in a bowl, stir until any lumps are gone, refrigerate for 30 minutes before cooking, then measure out enough to fill a crepe pan, and flip as you would a pancake.
Yield: makes about a dozen crepes
Pairing: We love this with a chilled dessert wine, a Sauternes if you have it.
