Chef 101 Humpday Recipe: Five Minute Fudge

Today, and next Wednesday, I am running recipes of my own hand…or someone else’s…that I’ve had over twenty years.  Both are similar to most of the recipes I like that can get all of the ingredients and directions on one side of a 2″ by 3″ index card.  

These two I made for many years…but for some reason stopped.  And, as my husband Eddie has been here for the journey, he figured with my new found interest in cooking, these should be resurrected.

 5 min fudge
Ingredients:
1 small can Carnation evaporated milk
1 2/3 cup sugar
1 1/2 cup Nestle’s semi-sweet chocolate drops
1 1/2 cup small marshmallows
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup nuts (optional)

Directions:
Heat milk, sugar and salt, stirring constantly until boiling for 5 minutes.  Turn off flame, add chocolate and marshmallows and stir until melted.  Add vanilla and nuts.  Pour into buttered dish.

And it kind of ends there.  I know it hardens, and I believe the word “refrigerate” is needed.  Pair with Cabernet or Port.
