Beth Jacques: Pineapple Sage Champagne

Pineapple Sage Champagne

Ingredients

2 tablespoons Pineapple Sage Syrup

Champagne

1 fresh sage leaf, garnish

Add the syrup to a glass.

Fill the glass with Champagne.

Add the sage leaf.

Serve.

Ingredients

2 cups Pineapple Juice

3 fresh sage leaves

Directions

Heat the juice and sage leaves in a small saucepan over the low heat.

Slowly bring to a simmer.

Let simmer for 30-45 minutes.  The juice should be reduced down to about 1/2 -3/4 cup.

Remove the juice from the stovetop and pour into a container.  Place in the fridge until chilled.

I like to make flavored syrups to go with cocktails.  You can make a lot of different cocktails with just one syrup.  My favorite is to add a few spoonful’s with champagne or prosecco.

I like to make a simple syrup really interesting.  I’ve mixed it up with pineapple juice and sage.  It’s a unique flavor that can be appreciated all year long.
