Chef Eve 101 Makes: Opah

It’s a fish. From Hawaii. Similar to Mahi Tuna. “Fishmonger approved.”

In our monthly forage to the Whole Foods seafood counter we have been lucky, and much poorer, after selecting whatever they recommend. Tonight was no different.

We bought the three filets of fresh Opah, used the two ingredients as shown below, added red beans and rice, artichokes and a martini – it was all good. Highly recommend it, or whatever is fresh in your fishmonger’s case. It’s time to try something new, and as long as it’s fresh and grilled it’s bound to be better than frozen, breaded or fried.
