Three Seasonal Italian Inspired Cocktails are Created by Gifted Mixologist William Perbellini
Bar Toscana, the popular Brentwood bar and restaurant, debuts three new fall cocktails designed by the talented William Perbellini, resident mixologist. The seasonal additions to the cocktail menu of specialty drinks includethe Barrel’s Share; La Figata;and theFrench Quarter. Perbellini, who perfected his craft at the famed Hotel Cipriani in Venice, created the drinks to complement the extensive menu of Italian Stuzzichini, Tuscan Classicsand Dolce. Samples of the Bar Toscana menu featureBeet Salad with Goat Cheese, Pickled Plums & Hazelnuts; Fresh Pea and Artichoke Salad with walnuts and ricottasalata cheese: the Stuzzichino Toscano of burrata cheese, roasted spicy pepperoni and tomato jamwith Italian bread toast; Smoked Salmon with Fresh Grapefruit, asparagus, pinenuts, frisee salad and homemade breadsticks; Oven Baked Gratineed Shrimp and Calamari Skewers; Hamburger Bar Toscana – a minced angus rib-eye burger slider with truffle cheese, shallot and Parmigiano crisps; Dry Aged Rib-Eye Steak Skewers, roasted peppers, pancettaand herbs sauce and a variety of Wood Oven Fired Pizzas. Perbellini’s expertly mixed drinks pair perfectly with the menu and bring out the magnificent flavors of the fall season.

The genius of muddling figs and fig jam, dark rum, barrel-aged bitters and fresh ground cinnamon produced a dark tasty concoction. Sit at the bar if you can when you visit so you can see all of the tricks and tools Perbellini employs to make such unique drinks.
Barrel’s Share, photo by Eve. A Bourbon base is usually a fave of mine and this did not disappoint. Loved his own cinnamon simple syrup against thyme, Luxardo cherries and bitters. It was frothy, smoky and creamy = the trifecta!
French Quarter, photo by Eve. Perbellini said he chooses brown spirits over white for the fall. This was nothing like I’ve ever had before: the lemon made it zingy while the muddled grapes added balance, and then he adds sage! (Look for herbs direct from Perbellini’s new garden blooming next to the bar.)
